How to make homemade macoroni & cheese?!


Question: I consider myself a fairly good cook, but I have never mastered this. Grandma made it very creamy and would bake it til the top browned crisply. I would love to make it for Christmas. Please help.

GOLDEN BAKED MACARONI AND CHEESE

? cup butter
? cup flour
3 cups milk
1 cup grated cheddar cheese
? teaspoon salt
? teaspoon dry mustard
? teaspoon pepper
1 teaspoon Worcestershire sauce
? package (8 oz.) bite sized macaroni
1 cup grated sharp cheddar cheese
bread crumbs

Melt the butter in a large saucepan. Blend in flour and gradually add the milk, stirring constantly; add the seasonings. Cook until the sauce is thickened.
Add one cup grated cheddar cheese and stir until melted. Cook macaroni as directed, drain, and add to cheese sauce and mix well. Turn the mixture into an 8-inch square baking dish or pan. Sprinkle the top with 1 cup sharp cheddar cheese and breadcrumbs.

Bake in a 200°F oven for about 15 minutes. Remove from the oven and place under the grill until the cheese is bubbly and lightly browned. Serves 6-8.

Look on www.tasteofhome.com, most of the recipes on there require only normal ingredients that everyone would have. Everything I've made from a Taste of Home recipe has turned out. Everything.

I have never baked mine before but here is how I fix my homemade mac and cheese...

I boil my noodles..whether it be the shells or regular mac until they are good and done. I put them in a collander to drain off the water and then I return them to the stove. I add a little bit of milk in there....but do not cover the noodles with the milk. I add some salt and pepper and then when the milk is almost boiling....I cut up pieces of velvetta and stir it into the milk and let it melt.....sometimes I slip up and put too much milk in there and is kind of runny....

I would say you could make it this way and then pour it into a baking dish and sprinkle with some shreddred cheese and pop it into the oven and bake for about 10 to 15 minutes until it is golden brown

Everyone I work worth makes the Over the Rainbow Mac & Cheese that Patty Labelle had on Oprah! It is to die for! Do a general search for it. It's the best!

Use elbow macroni, boil them until they're moist, drain the water out, add on specifc cheese of your choice and stir.

Crockpot mac & Cheese YUMMY

1 12 oz. can evaporated skim milk
1 1/2 cups nonfat half and half
1/2 cup egg substitute (or 1 egg beaten)
8 oz. uncooked elbow macaroni
3 1/2 cups shredded cheddar cheese, divided
1/2 tsp. pepper

Combine evaporate skim milk, half and half, egg substitute, macaroni, 3 cups of cheese, and pepper in slow cooker and mix well. Sprinke remaining cheese on top. Cover and cook on low heat for 2-3 hours.
