Does anyone have any good slow cooker breakfast recipes?!


Question: I am having a good size Christmas type get together and the people are spending the night. I don't want to have to get up and jump right into cooking breakfast. Any ideas would be greatly appreciated.

CROCK POT BREAKFAST CASSEROLE
1 bag (32 oz.) frozen hash brown potatoes
1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed
1 medium diced onion
1 green bell pepper diced
1 1/2 C. shredded cheddar or Monterey Jack cheese
1 dozen eggs
1 C. milk
1 t. salt
1 t. pepper (more or less to taste)

Place a layer of frozen potatoes on the bottom of the slow cooker, followed by a layer of bacon then onions, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.
Beat the eggs, milk and salt and pepper together. Pour over the Crockpot mixture, cover and turn on low. Cook for 10-12 hours.
OR try this one:
SOUTHWEST CROCKPOT BREAKFAST
Prep Time: 20 minutes
Cook Time: 8 hours,
Ingredients:
1 Tbsp. butter
1 lb. bulk breakfast sausage, cooked and drained
1 onion, chopped
1 green bell pepper, chopped
4-oz. can chopped green chilies, drained
2-1/2 cups grated Monterey Jack cheese
18 eggs
Preparation:
Grease inside of crockpot with butter. Starting with sausage, layer meat, onions, peppers, chilies, and cheese, repeating the layering process until all ingredients are used.
In large mixer bowl, beat eggs with wire whisk or eggbeater until combined, then pour over mixture in the crockpot. Cover and cook on low 7-8 hours. Serve with sour cream or fresh salsa. 12 servings
OR
CROCKPOT APPLE OATMEAL
Prep Time: 20 minutes
Cook Time: 9 hours,
Ingredients:
2 cups milk
1/4 cup brown sugar
1 Tbsp. melted butter
1/4 tsp. salt
1/2 tsp. cinnamon
1 cup regular oats
1 cup peeled, chopped apple
1/2 cup chopped dates or raisins
1/2 cup chopped walnuts
Preparation:
Spray the inside of a 3-4 quart slow cooker with nonstick cooking spray. Combine all ingredients in the slow cooker and mix well. Cover and turn on LOW setting. Cook overnight or 8-9 hours. Stir well before serving. 8 servings

Southwest Crockpot Breakfast
This delicious and rich breakfast recipe with flavors of the Southwest cooks overnight in your crockpot.
INGREDIENTS:

Brown 10 critters real well(squrrell is good) place them in crock pot. Add a can of chicken broth and 3 tablespoons of flour.Salt and Pepper to taste, let cook all night on low. Serve over rice with scrambled eggs and Toast. Hay it aint all about the grits.

Ingredients:
1 cup shredded Monterey Jack cheese
1 cup shredded Cheddar cheese
1/2 cup diced cooked ham
1/3 cup chopped and seeded tomatoes
1/4 cup chopped green onion
4 flour tortillas

Directions:

Combine ham, tomatoes and onion on crockpot. Cover; cook on low for 2 hours. Stir in cheese. Cook for 10-15 minutes on high or until cheese is melted. Serve with tortillas. Can add scrambled eggs to mixture during last 15 minutes if desired too.
