bread and butter pudding

Bread and butter pudding

Serves 4



Preparation time less than 30 mins

Cooking time 30 mins to 1 hour







Ingredients
25g/1oz butter, plus extra for greasing
8 thin slices bread
50g/2oz sultanas
2 tsp cinnamon powder
350ml/12fl oz whole milk
50ml/2fl oz double cream
2 free-range eggs
25g/1oz granulated sugar
nutmeg, grated, to taste



Method
1. Grease a 1 litre/2 pint pie dish with butter.
2. Cut the crusts off the bread. Spread each slice with on one side with butter, then cut into triangles.
3. Arrange a layer of bread, buttered-side up, in the bottom of the dish, then add a layer of sultanas. Sprinkle with a little cinnamon, then repeat the layers of bread and sultanas, sprinkling with cinnamon, until you have used up all of the bread. Finish with a layer of bread, then set aside.
4. Gently warm the milk in a pan over a low heat to scalding point. Don't let it boil.
5. Crack the eggs into a bowl, add three quarters of the sugar and lightly whisk until pale.
6. Add the warm milk and cream mixture and stir well, then strain the custard into a bowl.
7. Pour the custard over the prepared bread layers and sprinkle with nutmeg and the remaining sugar and leave to stand for 30 minutes.
8. Preheat the oven to 180C/355F/Gas 4.
9. Place the dish into the oven and bake for 30-40 minutes, or until the custard has set and the top is golden-brown.

Roasted Garlic & Pearl Onions With Herbs
hmm... yummy...

1/4 cup olive oil
20 bulbs garlic (or as little "or" as much as you want)
1 lb white pearl onions (optional)
salt and pepper
2 four inch sprigs rosemary, minced
4 four inch sprigs thyme, minced

-------------------------------

1. Cut pointed end off garlic bulb & pearl onions.
2. Rub olive oil on garlic and onions sprinkle with remaining ingredients.
3. Wrap in foil keeping top open (so they caramelize not steam) or place in a heavy bottom pan and bake 375 for 1 hour. Baste with oil from the bottom of pan 1/2 way through.
4. Use freely with whatever you desire.
5. Options --.
6. I remove all the garlic and onions from the skin(which you can save the skin to make a stock with)then place the garlic and onions in a container and freeze or.
7. In the pan you roasted it in pour olive oil in and simmer while loosening all the bits of goodness from the bottom of the pan. Cool the oil then top the garlic and onions. Refrigerate to use on everything.
8. Mash and add to home made dressing.
9. Toss into day old bread cubes for croutons.
10. Spread on fresh crisp bread (My personal favorite).

This time of the year is great for sweet potatoes. I'm all ways fix-in them candied with brown sugar, maple syrup, butter, and Cinnamon, don't forget to peel them first is real simple to make. Good Eattin'.

Pizza (makes one super large pizza - half ingrediants for a medium pizza)

400ml strong white flour
Pinch of salt
1tsp baking powder
1tsp sugar
1/2 pack of dried yeast
A swirl of virgin olive oil

Mix together, then add water until it forms a dough, roll out on a floury board, pull, stretch, knead it, then roll into a ball, put a drop of olive oil on and rub in. Put in a bowl with cling film over the top somewhere warm for about an hour.

Roll out into pizza shape, put some pizza sauce on (from your local supermarket or make your own) & a mixture of mozarella & cheddar cheese on the top...and pop in the oven until the cheese has melted and is going golden brown.

personal i like lots of oven recipes .....chicken roast, there is one

pork sausage rolled in cabbage and the sauce is full cream milk mixed with those quick made soups found in packets in any grocery place the sausages on a pirex cover them with the sauce and place them in the oven for like 20 min...

Last night I made a delicious beet leaf (Beta vulgaris) pie... You can use spinach or any other dark green leaves too. here's how to do it:

Rollout half a packet of shortcrust pastry (I use ready made frozen) and line a quiche dish with it. Chop up 800g of beet leaves or spinach finely and cook them for 3 minutes in a microwave oven, until soft. Squeeze out the excess juice and arrange inside the pastry.

Put a handful of pistachio nuts (60g - can be almonds or cashews) and a handful of raisins in a blender and blend. Sprinkle these over the leaves in ther pastry shell.

Grate up some cheese - 100g of cheddar, or any other hard cheese you have lying about. Sprinkle this over the leaves and the nuts and raisins.

Mix up 3 eggs with a cup of milk, using a fork. Pour it over the rest and pat everything down. Now drape the other half of the pastry (thinly rolled out) over the top and close the pie by pinching over the sides of the dish. Brush the top with milk or some leftover egg.

Bake in your oven at 175 degrees for about half an hour - you will see it going brown and it will start to smell fantastic.

Argentine Schnitzels (milanesas):
Milanesas
10 thin slices of meat (breakfast steaks)
1 egg
3 Tablespoons oil
1 Tablespoon vinegar or lemon juice
2 teaspoons oregano
1 teaspoon chopped parsley Salt & pepper Fine dry bread crumbs





PREPARATION
a- In large bowl, mix all ingredients except meat. Add meat and mix.

b- Place bread crumbs in large pizza or cake pan. Place slice of meat on the crumbs and cover with more crumbs. Press down with your hands. Turn meat over and repeat.

c- Place milanesas on large oiled cookie sheet with high sides. In gas oven, cook directly over flame on "floor" of oven. Turn over once and lightly brown. Serve with tomato salad or french fries.

take pelled potato's cut in 4th
take onion's cut in 4th
take green pepper's cut in 4th
cover with water
add salt and pepper
bake 350* for 1 hour check till water is very low
