ooooh, i just thought of this salsa my mom makes. it has cream cheese in it. it's really very tasty & so easy to make. and cheap too!
you use a jar of medium salsa & a bar of cream cheese. let the cream cheese stand for a while til it is room tempurature. then you add small chunks of cream cheese to the salsa. microwave it a little bit at a time to melt the cream cheese up. (stir it, nuke it a little, stir it some more. do this till there's no chunks of cream cheese left. ) you can add black olives too if you like. that's how i prefer it but iknow some people don't like them. either way it is fabulous. i brought it to an office party last year & they gobbled it up in a half hour.
You always need a veggie tray, if you cut up the veggies yourself and put them on a nice platter with a great dip...it will be great. The same with fruits, only a chocolate or caramel dip in a cute bowl in the middle with those tiny appetizer forks. Then you can add buffalo wings( I agree they are a must) a cheese ball with crackers, and desserts. The grocery store near me has a cheesecake sampler that is generic brand and delicious.
A variety of crackers...gourmet (wheat, garlic, etc...) plus cheese, meats, olives, herbs, etc. make great platters.
You should think about different types of apps...come up with different ways to administer the actual food (bread, chips, crackers, lettuce leaves, etc.,) and then think about a theme. Maybe sushi? Italian? Mexican?
How about "Continents of the World"?
An idea might be (and this is a lot easier...apps parties can become very expensive) to have each person bring one thing that begins with their first name (or any other idea)...this can become a springboard to many dishes...

If you have a costco where you live hit there freezer section numerous selections for appetizers anything from sausage rolls to spring rolls to mini quiches. Take your pick most people love Chicken wings and Cold Prawns and cocktail sauce. Don't forget a veggie and dip platter and oif course a meat and cheese platter always huge hit. Cosider a fruit platter as well and remember the crackers.

Baked Brie in Puff Pastry (Baked Brie En Croute)
This is one of my favorites because it can be done up to a month ahead, it looks expensive, and it looks like it took a long time to make.)
1 package puff pastry dough (In the freezer section usually by the Cool Whip and pies), defrosted in the refrigerator
1 2-lb wheel of brie, about 8" in diameter
(I buy mine at the Grocery Outlet store so it is not very expensive)
1 egg beaten with 1 TBS water for "glue" and egg wash
Roll out one piece of pastry on a lightly floured board and place brie in the center. Cut pastry around brie in a circle about 2" larger then the brie. Brush the 2" edge of pastry with egg wash. Make diagonal cuts in the pastry as needed and fold the pastry up the side of the brie using additional egg wash as needed to glue the pastry to the side of the wheel of brie. Set aside. Roll out second sheet of pastry and cut in a circle about 2 " larger than the cheese. Place brie upsidedown on second pastry sheet. Brush edge with egg wash and fold up pastry using egg wash to glue the edge to the side of the pastry covered wheel of cheese. Turn brie over and place on parchment covered baking sheet (so that the raw edges of the cut pastry are on the bottom). If desired, cut decorative shapes from the scraps of dough and glue onto the top of the brie using the egg wash. Brush top and sides of brie with egg wash.
At this point the brie may be refrigerated overnight or frozen for 1 month. Let brie come to a "just cool" temperature before baking. Place in a preheated 400 degree oven for 35-40 minutes until golden brown. Let cool for at least 90 minutes before serving or the cheese will run out when cut open.
The really fun part of this recipe is that you can add fillings to the center of the brie which taste great and are a surprise when it is cut after baking.
The easiest way to cut the brie in half across the center is to get a long piece of dental floss and wind it around the wheel in the center of the cheese. Cross the ends so that the end on your right hand side is in your left hand and the end on the left hand side is in your right hand and then pull. The dental floss will slice through the cheese without making a big mess. It is easier to cut if the cheese is cold.
For the filling you can add anything you like. Sauteed mushrooms, sauteed spinich with garlic, or cranberries (or blueberries) cooked with a little brandy, chopped nuts, and ginger. Almost anything that you like that is not too runny.
stuffed mushrooms
Ingredients:
6 oz(150 g) soft spreading pate
3 oz(75 g) fine breadcrumbs
3 tablesp milk
1 ? tablesp lemon juice
salt
freshly ground black pepper
2 tablesp fresh chopped parsley
To finish:
12 open cup mushrooms, wiped and oiled.
Sprigs of water cress
Sliced stuffed olives
Directions:
1. In a bowl, mash pate till smooth.
2 Beat in remaining ingredients till well blended.
To Serve Now: Spoon mixture into a piping bag fitted with a large star nozzle, pipe swirls of pate mixture on to each mushroom( see picture). Place in an oiled baking tin, bake (350 Deg F , 180 deg C, gas 4) 12-15 mins, while roasted turkey is resting. Top each with a slice of olive.
To Freeze: Pack stuffing into polybox, label, use within 1 month.
Olive tamanade, tabbouleh, Chili with taco chips to dip it with, deviled eggs. brie cheese that you can warm so its sort of soft, and fresh french bread to spread it on, olive oil seasoned with roasted garlic and basil, and french bread to dip into it. Forget sweets. I like to make tapanade, but you can find it already made in a good food market, the same with tabouli. Just put it in a bowl, that you have decorated with bits of pine tips and tiny cristmsas balls.
