How do you cook butternut squash?!

The classic is butter and brown sugar. You can also add a little oj to that, and some chopped pecans and cinnamon. OR you can use maple syrup. Bake it "meat" side up if you're doing that, or turn it up 1/2 way through baking and then add.

Add butter and brown sugar.

After mine is bakes like yours, I just add butter and a little salt and pepper unless I have gravy...then it's great! Even the kids might like it with gravy!

Try this recipe, I made it for Thanksgiving and it was a hit.

You can cut it up and boil it. Just like when you make mashed potatoes.

When it's done cooking, mash it up and add butter, brown sugar. You can also add molasses, if you'd like.

Oh My! Butternut Squash


Ingredients
1 medium butternut squash
1 Tbsp. butter
1 scoop Oh My! Chai?

Directions
Pierce butternut squash with a fork; microwave for 10 minutes. Cool; cut in half, scoop out and discard seeds. Scoop out cooked squash; put in bowl with butter and Oh My! Chai?. Microwave for approximately 1 minute or until margarine melts. Stir; serve. Makes 3-4 servings.

Butternut Squash Bake:

1? hours 50 min prep
7 servings

1/3 cup butter or margarine, softened
3/4 cup sugar
2 eggs
1 (5 ounce) can evaporated milk
1 teaspoon vanilla extract
2 cups mashed cooked butternut squash
TOPPING
1/2 cup Rice Krispies
1/4 cup chopped pecans
2 tablespoons butter or margarine, melted
1/4 cup brown sugar (optional)

Bake the squash until a fork can easily be inserted.
Scoop out squash flesh and discard seeds.
Mash squash flesh and measure out 2 cups.
The squash flesh will be rather runny.
In another bowl cream butter and sugar and add the 2 eggs, 5 oz evaporated milk, and vanilla.
Add the 2 cups of squash.
Pour into a 11 x 7 inch baking pan.
Bake uncovered for 45 minutes at 350.
Combine topping ingredients and sprinkle on and bake another 5 minutes.
