Taco/Burrito Filling
2 cans black beans (dried is better)
1 can corn
1 TB taco seasoning
1 sm. onion, diced
1 TB diced green chiles
1 TB oil
a little bit of lemon juice Sauté onion in oil until soft. Add chiles and corn. Stir for 1-2 minutes. Add taco seasoning and black beans. Add lemon juice. Heat through. Serve with taco shells, taco chips; burrito wraps; over rice; etc.

1 lb extra firm tofu
1/2 onion
1 garlic clove, crushed
2 teaspoons extra-virgin olive oil
1/8 cup Braggs liquid aminos or tamari
3 ounces tomato paste
1/2 teaspoon ground cumin
1-2 tablespoon chili powder
14 ounces canned diced tomatoes

Optional for more texture: Freeze tofu overnight. Thaw by boiling for 15 minutes.
Sauté onion and garlic in olive oil.
Add aminos, tomato paste and spices to pan. Stir well.
Squeeze the water out of the tofu with a dishtowel. Crumble it finely into the pan (so that it vaguely has the texture of ground beef). Cook, stirring occasionally, a few minutes or until slightly browned.
Drain most of the liquid off the tomatoes, then add to pan. Stir and cook a few more minutes.

Brown 1 lb. ground beef w/ 1/2 medium onion and 2 mashed and diced cloves of garlic. We like ours with cubed potatoes, which I cook w/ the ground beef. That's optional. Drain grease. Add 1 can diced green chilies, 1 tsp. each ground cumin, garlic powder or salt and onion powder or salt. If using the powders, add salt to taste. Add 1/4 teaspoon black pepper. Taste and adjust seasonings. If you like it spicier, add one or 2 deveined and seeded chopped jalapenos. If you like it REALLY hot, don't devein or seed the jalapenos. Spoon onto flour tortillas, sprinkle with a good amount of cheese (any you like) and roll.

Burrito Or Taco Filling recipe

This is a fantastic way to make burrito or taco filling. To make it spicy, add the Chorizo. If you wish to keep the heat down, leave out the Chorizo and add potatoes.

Burrito Or Taco Filling Ingredients
See below 1/2 cup Yellow Onions chopped
2 pound Chuck Roast (Boneless) 3 medium Baking potatoes cooked and cubed
1 bunch Cilantro chopped 1 teaspoon Salt
1 pound Chorizo Beef or Pork

Instructions for Burrito Or Taco Filling
1. Sprinkle salt on chuck roast and place in crock pot. Cook on low for about 6 - 8 hours, or until beef starts falling apart.

2. When meat is done, remove from crockpot and put in a 13 X 9 pan. While the meat is cooling, cook chorizo. Add cooked and cubed potatoes, onions, and cilantro. Mix together and take off heat.

3. Take two forks and shred meat in pan. Then add Chorizo mixture. Mix everything together.

4. Heat flour or corn tortillas and fill with meat mixture.

This is especially good if you want to make taquitos.
