Guacamole

The flavour of guacamole depends on choosing lovely ripe but firm avocados - no soft spots or they will be brown. Guacamole must be made just before it is used - otherwise it will go brown and taste bitter.



Degree of difficulty: Low

You need:
4 medium avocados
1 juice of 1 lemon
1 clove of garlic mashed with good pinch of salt
Cracked pepper

Method:
Peel the avocado, remove the flesh from the seed, place in a bowl and mash with other ingredients. Adjust the seasoning to your taste, then it is ready to serve.

This is how the purests love their guacamole, with the true flavour of the avocado carrying the taste.

However, hear are some variations you could use:


add ? sour cream to the mix for a creamier dip

add fresh chopped chilli and finely chopped red onion for a little extra zing

add fresh corn, finely chopped ripe tomato, spring onion and coriander to make a salsa, serve half and half in a bowl with sour cream, and top with sweet chilli sauce for an interesting dip trio

add cream cheese, a dash of tobasco and chives for a rich dip

Serving Suggestion: Serve with corn chips or toasted pita.

Leftover Potential: Will keep for a couple of days in the fridge.

Peel, pit and mash 4 avocados.
Peel and mince 2 cloves garlic.
Toss in with avocados.
Cut an onion and scrape the cut surface with a spoon over the bowl the avocados are in to add the juice.
Add:
1 tsp. lime juice
1 tsp. lemon juice
1/4 tsp. cayenne pepper (less if you like)
1/2 tsp. sea or kosher salt
Mix together and add a diced roma tomato if you like.

2 really nice Haas avocados, just soft enough to, "give" a little, peeled, smashed with
garlic
cumin
chopped onion
chopped tomato
a little cilantro (optional)
chill very well.
Even better when served with a fresh salsa and hot beans and Spanish rice.

i found good recipe online, i tried it about 2 weeks ago & it came out great.
i used dried cilantro in a jar, not fresh cilantro. i know they say fresh is best but it came out good anyway. i did use fresh garlic since i had some, instead of the garlic powder. i'll post the link if you want to check it out.....

Mashed up avocados
Salsa
Lemon Juice
Lemon Pepper
Garlic Powder
Pepper

Ingredients listed in order of quantity. Mix as you go, and remember; you can always add more, but you can't take it out. Taste as you go then when it taste good it's done!

Mash the guacamole and add some lemon juice to it .Press one clove of garlic with salt add some cilantro to it and press. Add the mixture to the guacamole ,add a little hot chili and bon appetit.

I love guacamole. I use two almost soft Haas avocados, chopped tomatoes, a bit of garlic, and onion powder, lime juice, a pinch of salt, and a couple of squirts of green salsa. Mix it together with a fork until its mushy, but still contains small chunks of avacado. Ummm Ummm Good.

Guacamole is a matter of personal taste: I like mine to stay a bit chunky. So I don't really mash the avacado. I cut it into cubes. Also, I like the taste of roasted peppers and lots of lime. Sometimes I make it with tomatoes and sometimes not.

For tacos, though, I would make it a little creamy rather than chunky.

2 avocados
1/2 white onion, minced
1 roma tomato, seeded and diced
1 or 2 jalapeno or serrano chiles, roasted, peeled, seeded and minced very fine
Juice of 1 lime
plenty of salt (to taste)

Scoop the avocados from their shells. Gently mash them with a fork. Add the remaining ingredients and mix. If you are not serving it immediately, place plastic wrap over it so that it touches the surface of the guacamole. This will keep it from oxidizing and turning black.

Avocados are a nearly perfect food so there is no need to over do it, All you need are nice ripe Avocados, a pinch of salt and some lemon juice,

If you like it spicy, make a batch of Pico
Make sure to use only fresh ingredients
cilantro, tomato's,onion, and jalapenos.

this way you have the option to offer your guest
plain and simple, or hot and spicy

# I use Lipton or Knorr's Onion Recipe Soup or Dip Mix, it faster and taster better than I cry and cut on onion and unsalty onion. It is simpler and faster and put in the refrigerator for tight air to prevent the brown coloring.

Results. My friends love it and even they asked how I did.
