How do you make and serve mushroom gravy?!
Answers: I used to work with someone whose grandmother (who is from Latvia) made really good mushroom gravy that she served over noodles. I have tried, but I usually end up with bland gravy and soggy mushrooms. How do you make mushroom gravy and how do you serve it?
Vegetarian Mushroom Gravy:
1 batch
2 1/3 cups vegetable stock
5 ounces mushrooms, sliced
3 1/2 tablespoons all-purpose flour
Combine 1/3 cup stock and mushrooms in a heavy nonstick skillet over medium heat. Saute mushrooms 7-8 minutes or until they begin to turn brown and liquid has almost evaporated.
Remove from heat and set aside. Combine 1/4 cup stock and flour in a jar with a tight fitting lid.
Shake vigorously.
Combine with remaining stock in a heavy saucepan over high heat. Bring to a boil.
Reduce heat to medium and simmer 15 minutes, whisking frequently, until mixture begins to thicken.
Add sauteed mushrooms and simmer until just heated throughout. Season with salt and pepper to taste. Good luck.

Mushroom gravy
3 fresh mushrooms, chopped
2 green onions, minced
1 tbsp. butter
2 tbsp. sherry
5 oz. can beef gravy
Saute mushrooms and onions in butter for 5 minutes. Add sherry and gravy. Simmer for 5 minutes. Serves 3.
It should be served in a gravy bowl for easy pouring
Ghetto mushroom gravy
sliced button mushrooms
butter,flour,bacon drippings,
kitchen bouquet, chicken stock
direction:
get your clean nonstick fry pan hot
add a stick of butter,
dump in the shrooms,S&P
saute' them shrooms till they are heated through,
remove the shrooms to a bowl,pour in the bacon dripping and flour and make a blond roux,toss the shrooms back in,add 1 tablespoon of kitchen bouquet,stir. Add chicken stock, simmer for five minutes. adjust seasonings.
Make a beef gravy from the pan drippings (or chicken gravy if that is what you are cooking) and once the gravy is thickened add cooked mushrooms and some cream (or milk) to it. Quickly stir it together and it is done. The key is you have to have a roasted meat to make the gravy from its drippings.
