How do you fry mashed potatoes? For potato parries?!
Has anyone done this? I am beginning to think this was my mother's invention.
Answers: When I was a child in the 50's and 60's my mother would make potato patties out of left over mashed potoes. I have tried to duplicate this but no luck. I thought she just made the mashed potatoes thick and after they sat in the fridge over night made patties and fried them. This did not work for me.
Has anyone done this? I am beginning to think this was my mother's invention.
You have to add stuff! I think the eggs will make the difference.
2 cups mashed potatoes
1 large egg, beaten lightly
6 tablespoons all-purpose flour
11/2 tablespoons grated onion
2 tablespoons chives
Salt and pepper
I know what you're talking about. I've tried it myself and they just fall apart. I wonder if they could somehow be breaded?

Try this one:
Leftover mashed potatoes (about 1 quart)
1 onion, diced
1 egg
1 c. cheese, grated
Flour
butter
Salt and pepper
Combine mashed potatoes, onion, egg and cheese. Shape into large size balls. Roll into flour and flatten into patties. Melt butter in frying pan and brown for about 5 minutes on each side. Salt and pepper to taste.
If you don't have that many potatoes, don't use that much stuff in them. My Mama never put the cheese in them, but I found they tasted pretty good that way.

I've always made the mash 'tater patty then dip in buttermilk-n-egg wash, then in flour, again in egg wash then into breadcrumbs. Fry in hot cast iron skillet {i use lard} until golden brown.
For the Reverends "Twice baked, over stuffed fried 'tater pattys";
mix in some stuff into mash potatoes before making patty, like bacon bits, chives, sour cream, ? /??????
Also helps to chill the patty prior to frying.
