Does anyone know a good recipe for miso soup?!

You can usually buy miso paste in your grocery store or health foods store. Mix it with some vegetable or fish stock in a saucepan and heat until just barely warm (DO NOT BOIL!), and add Wakame seaweed that has been rehydrated (to do this, put some dry wakame in a bowl of lukewarm water until it becomes moist and uncurls, you can find this in the international foods aisle). Then cube up some tofu and add it in to your miso soup! You can also add chopped scallions for some crunch.
1 Tbsp. Hondashi (instant fish stock)
1/2 cup shiro (white) miso paste
8 oz. tofu cubes
2 green onions, thinly sliced
5 cups water
1. Bring the water to a boil.
2. Add the Hondashi and miso paste and stir until miso is dissolved.
3. Add the tofu pieces and cook an additional minute before serving.
4. Garnish with green onion slices.
There is a miso paste you can buy in red, yellow or white varieties of miso. It's difficult to make as it needs to be fermented. Some Asian sections in stores should get it, and many larger health food stores carry it. It's in a tub like a large margarine type. The white is milk, yellow sort of medium, and red is the strongest flavor. Yes, it's very good for you! Get the lowest sodium type.
