1lb ground beef
1 large can refried beans
1 pkg. taco seasoning
cheese (about 1 cup depending on tasted)
2 pkg. corn bread mix
Toppings - lettuce, tomato, onion, sour cream
Make corn bread batter according to pkg. directions.Brown ground beef; drain fat. In 9 x 13 pan spread the beans along the bottom; then layer the ground beef and the cheese pour corn bread batter over the top. Bake at 425 for about 10 - 15 minutes (until cornbread is done)

You will need
1 lb ground beef
1 pack soft tortillas
1 cup shredded cheddar
1 cup salsa
you can also add rice or beans
lightly spray the bottom of a 9x13 glass pan with cooking spray. Place a layer of soft tortilla on the bottom
add a layer of browned and drained ground beef and then some salsa and top with shredded cheddar. you can repeat these steps until you reach the top of the pan. You can add any number of things to this to make it your own such as chopped tomato, peppers, onions and so on...
bake at 350 covered with foil for about 25minutes then remove the cover and bake for another 10 minutes. Top with sour cream or eat as is. My family loves this.

INGREDIENTS
1 pound ground beef

1/2 cup mayonnaise or salad dressing
2 teaspoons chili powder
2 cups crushed tortilla chips
1 cup shredded Colby cheese
1 cup shredded Monterey Jack cheese
1 medium tomato, chopped
2 cups shredded lettuce


DIRECTIONS
In a saucepan, brown ground beef; drain. Add salsa, mayonnaise and chili powder; mix well. In an ungreased 2-qt. baking dish, layer half of the meat mixture, chips and cheeses. Repeat layers. Bake, uncovered, at 350 degrees F for 20-25 minutes or until heated through. Just before serving, top with tomato and lettuce.

Mexican Lasagna
Ingredients:
1 1/2 Ibs extra lean ground beef (or chicken)
1 cup diced red onion
1 cup diced green pepper
2 tsp minced garlic

1 cup canned black beans, drained and rinsed
1 Can diced tomatoes (drained)
1 cup frozen corn
1 -2 tbsp chili powder
1-2 tsp ground cumin
2 cups tomato and basil pasta sauce (or any bottled pasta sauce)
1 cup salsa
2 tbsp fresh minced cilantro
4 whole wheat tortillas (10 inch)
1 1/2 cups packed shredded light old cheddar cheese
? cup chopped green onions
1 cup light sour cream
Method:
1. Preheat oven to 375. Spray a 9x13 inch casserole dish with cooking spray and set aside. (Also works well in a 9" cake pan, cutting the tortilla to fit., then you can either make 2 pans or only use 2 or 3 tortillas instead of 4)
2. In a large skillet, cook beef, onions, green pepper and garlic over medium-high heat until meat is no longer pink. Break up any large pieces of beef as it is cooking.
3. Add beans, tomatoes, corn, chili powder, and cumin. Cook and stir for 2 more minutes. Add pasta sauce, salsa, and black pepper. Bring to a boil. Reduce heat to low. Cover and simmer for 5 minutes, stirring occasionally. Stir in cilantro and remove from heat.
4. To assemble lasagna, spread 1/3 sauce mixture over bottom of casserole dish. Top witth half the
tortillas, overlapping and cutting as necessary to fit. Top with 1/3 of the sauce mixture, followed by half of the cheese. Cover cheese with remaining tortillas, followed by remaining sauce. Sprinkle remaining cheese over sauce and top with green onions.
5. Cover with foil and bake for 35 minutes. Remove foil and bake 10 more minutes. Let lasagna stand for at least 10 minutes before slicing for easier serving. Top each piece with a dollop of sour cream.

Taco Casserole

1 lb ground beef
1 (15 ounce) can chili beans, in sauce undrained
1 (8 ounce) can tomato sauce
2 tablespoons taco sauce or salsa
2-4 teaspoons chili powder
1 teaspoon garlic powder
2 cups coarsley broken tortilla chips
1 cup sour cream
8 green onions, sliced
1 medium tomato, chopped
1 cup cheddar cheese or monterey jack cheese, shredded
shredded lettuce
additional taco sauce, if desired

Heat oven to 350 degrees.
Cook beef in a 10 inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain.
Stir in beans, tomato sauce, taco sauce, chili powder and garlic powder.
Heat to boiling, stirring occasionally.
Place tortilla chips in ungreased 2 quart casserole.
Top with beef mixture.
Spread with sour cream.
Sprinkle with onions tomato and cheese.
Bake uncovered 20 to 30 minutes or until hot and bubbly.
Arrange additional tortilla chips around edge of casserole if desired.
Serve with lettuce and taco sauce.

1/2 cup taco sauce
1 can (8 ounces) tomato sauce
1 teaspoon garlic powder

dash of Tabasco sauce
6 ounce bag corn chips, slightly crumbled
chopped onion
chopped tomato
grated cheese
chopped lettuce

PREPARATION:
Pan Size: 3 quart casserole Oven Temp: 350 Time: 10-15 minutes

Brown ground beef; mix in the taco sauce, tomato sauce, chili powder, garlic salt, oregano, & Tabasco sauce. Simmer 10 minutes. Put half on bottom of a 3-quart casserole.

Top with about half of the crumbled chips. Add remaining ground beef mixture, some chopped tomato, onion, chopped lettuce, and grated cheese (use 1 cup or more). Put remaining corn chips on top. Bake at 350° for 12 minutes, or until hot and cheese is melted.
