SAUSAGE, EGG, HASH BROWN CASSEROLE

1 lb. sausage
9 lg. eggs, slightly beaten
3/4 c. milk
1/4 c. melted butter
24 oz. pkg. hash browns
8 oz. shredded cheddar cheese

Preheat oven to 350 degrees. Layer sausage on bottom of well greased 9"x13" pan. Add milk and butter to beaten eggs and pour over sausage. Add hash browns and top with shredded cheese. Bake 1 hour.

Southwest Breakfast Casserole
A great way to feed a hungry crowd for breakfast, this can be made ahead and put in the oven right before your guests arrive. Also great for Potlucks!

6 Slices white bread, crusts removed
1 lb Pork Sausage
4 C Colby Cheese, shredded
6 eggs
1 tsp salt
1 tsp dry mustard
2 C Half & Half
Butter or Margarine, softened

1. Lightly butter both side of bread slices and place in 9x13-inch baking dish.
2. In nonstick skillet, over medium-high heat, brown beef sausage; drain well and pat with paper towels. Sprinkle sausage over bread slices.
3. Sprinkle cheese over sausage. Follow with a layer of chopped green chilies.
4. In medium bowl, beat eggs lightly. Add salt, dry mustard and half-and-half. Mix thoroughly. Pour over casserole.
5. Cover with foil and refrigerate overnight.
6. To bake, preheat oven to 350°F and bake casserole 45 minutes, or until bubbly and lightly browned. Allow to stand 15 minutes to set. Cut into squares and serve with picante sauce on the side.

Fry your hash browns in a skillet, add sausage to brown. Just before everything is done, add some eggs (as many as you like) and serve when eggs are cooked. Quick, easy, and good. I also like to cook everything up and then make it into a burrito.

It should be easy for you to make because the book is for teens and my mom uses it

There is a recipe on pg. 5 called Hash Brown casserole

2 lbs ground sausage (1 medium and 1 hot)
1 (32 ounce) bag frozen hash browns
1 onion, chopped
1 cup cheddar cheese, shredded
Cook sausage and onion. Remove sausage and drain. In remaining sausage grease cook the potatoes. Mix together the sausage, potatoes, and 1/2 of the cheese. Place in a 9"x13" dish. Sprinkle rest of cheese on top. Bake at 350°until heated through. *This can be made ahead and refrigerated for a few days or can be frozen*

I dont have anything for sausage but if you dont mind bacon fry 1/2 pound of bacon in a big fry pan when bacon is done set aside with bacon grease left in the pan fry up one medium onion until almost soft fill the pan with hash browns cover and let cook on low to medium heat meanwhile breakup bacon into 1/2 inch peices when hash browns are half cooked add some onion and garlic powder to what ever taste u want then clear hashbrowns from center of pan and put 4 eggs in center cover and cook until the eggs are done to how u like them then sprinkle bacon back over the top and sprinkle with as much shredded cheese as u like i prefer sharp cheddar. cover again just until cheese melts

Try a frittata. Saute your hash browns & sausage in a skillet/pan along with onions, red & green peppers, (you might want to add a tomato/tinned tomatoes sans juice) toss the mixture while sauteing until al dente then whisk up some eggs (as many as you like) with a little milk & pour over the sauteed vegetables & cook gently for 3 or 4 minutes & then put them in the oven to finish for another 5 minutes or leave them on stove top but cover the pan to cook through. Fresh buttered bread & hot coffee or tea. NB*leftover vegetables work great here.

Breakfast Muffins

I use Bisquick for this

a batch of biscut dough
1 pound breakfast sausage
8 med eggs
cheese to taste
muffin pan


brown sausage
scramble in eggs
add cheese

place biscut dough in muffin pan, filling only 1/2 or little less full
spoon egg and sausage on top, filling only to top

bake aprox 15 min at 400 or until biscut dough is done

when they are done you have a yummy, fun take on breakfast, sereve with hashbrowns or alone. they are good cut in half with butter or jelly on them too. they are great for on the go too, just heat a few secs and go.

This is not a casserole, but try it on a Sunday morning:

Cut a loaf of french bread into 2" slices, then cut a pocket in each slice. Stuff each pocket with your favorite combination of meat & cheese--cheddar & sausage, ham & swiss, bacon & muenster--whatever you like. Then dip each filled "sandwich" in beaten egg and fry like french toast until browned on both sides & cheese is melted.

Kids LOVE this, and these are great as leftovers, too.
You can also make a sweet version with pie filling and some cream cheese in the pockets.

Huevos Rancheros...
Make a sauce with a can of stewed tomatoes, jalapeno, garlic and onions. You can use the sauce chunky or puree to make smooth. Season with salt and pepper.
Put some oil in a frying pan and fry up two corn tortillas, soft or hard is up to you.
Place the corn tortillas on a plate. Side by side or one on top of the other.
Next fry a couple of eggs. over easy.
Put some of the sauce on the corn tortillas, place eggs on top of that. Place more sauce to cover eggs and shred some cheese on top.
Serve with some hot coffee, Tea or chocolate.

Fiesta Breakfast Burritos


Ingredients
1 Tbsp. Fiesta Party Dip Mix?
12 beaten eggs
1/2 cup milk
4 oz. can green chiles
1 lb. browned, drained Jimmy Dean? sausage
1 cup shredded cheddar cheese
8 flour tortillas
Corn, Black Bean Salsa

Directions
Combine first 4 ingredients in large bowl; pour into greased skillet over medium-high heat. Cook until almost set; add browned sausage and cheese. Serve mixture in a warm flour tortilla with Corn, Black Bean Salsa. Makes 6-8 servings.
