Eggland's Best eggs?!
Answers: I hard boiled some Eggland's Best brand eggs the other night for a spinach salad and they were so difficult to peel! The shells stuck to the eggs and tore off pieces of the egg itself. I've never had a problem hard boiling eggs and this was the first time I used Eggland's Best eggs. Has anyone else had this problem with this brand? Did the eggs just sit in the water too long (the yolks were yellow, not tarnished in color at all)? I usually use the eggs from Price Chopper (food market where I live). Thoughts?
Why are some hard-cooked eggs hard to peel?
The age of the egg affects how easy or how hard it is to peel. Fresher eggs are harder to peel than older eggs because the albumen (egg white) is higher in acid. This causes the egg to stick more tightly to the shell. After a few days, the acid level decreases and the egg white loosens from the shell making it easier to peel. Pick eggs that are 7 to 10 days old. Check the date stamp on the carton to find the age.

It's because they were very fresh. Older eggs are easier to peel when you boil them.

try cool them in cod water before peeling next time
Fresh eggs ARE harder to peel than those a little older. But back on the farm we'd boil eggs that were warm from the chicken and did all right -- not always, but not too bad -- by boiling the eggs until done and then putting them in a bowl of ice water for about 20 minutes. Worked all right.

Egglands best are over priced and arent any better for you or worse for you than any other eggs...and theyre not free range usually...so dont believe the hype!!!
