Mexican Potato Burritos????!


Question: When I went back home, there were these burritos I got in Texas, that had meat and potatoes in them with some spicyness to them, sold by a mexican woman.

Does anyone know how to make these?

I think the burritos in question have shredded meat in them, and cubed potatoes, hot suace (RED HOT) and onions green cliles too. i know they make big batchesof the stuff say 4 or five galons and then roll into tortias? makining as many as possible then with time they tend to get hotter! the make like a stew... at theend they can add Cheese to cool it down a little...

Mexican Potato Burrito

Ingredients:
? 2 cups water
? 3 tablespoons butter or margarine
? 1/4 cup milk
? 2 cups Hungry Jack? Mashed Potatoes
? 2 teaspoons butter or margarine
? 1/2 cup chopped onion
? 2 cups cubed cooked chicken, turkey or beef
? 1 (1.25 oz.) package taco seasoning mix
? 1/2 cup chunky -style salsa
? 2 oz. (1/2 cup) shredded Cheddar cheese
? 8 (8 inch) flour tortillas, heated
? Shredded lettuce, if desired
? Chunky style salsa, if desired


Preparation Directions:
1. BRING water and 3 tablespoons butter to a rolling boil in medium saucepan. Remove from heat. Stir in milk and potato flakes with fork until well blended. Set aside.
2. MELT 2 teaspoons butter in medium skillet over medium heat. Add onion. Cook and stir until tender. Stir in chicken, taco seasoning mix and 1/2 cup salsa. Bring to a boil. Cook 2 minutes, stirring occasionally. Stir in cheese and prepared potatoes.
3. SPOON about 1/2 cup potato mixture down center of each warm tortilla. Roll up. Top with lettuce and additional salsa.

Yield: 8 burritos
Prep Time: 15 min
Cook Time: 16 min

Sounds like a Taco Bueno product to me...

Heck of a lot easier hitting the drive through than trying to re-create a recipe.

I'm just sayin....

Some call it guisado , or picadillo [ground meat ] out in EL PASO they have a place that make caldillo -cubed meat and potatoes in a broth with green chiles !
