Can your freeze celery for cooking?!
Answers: I sometimes need celery for stews and roasts, but never need or can use a full package so I end up throwing a lot out. Can it be frozen and used when needed? If so, do you cut it up? How long can you store in freezer?
Robert --- I freeze cellery in fact I have some in the freezer at this time. I slice it into the size pieces I need, blanch it for 3 min.in a small amount of water drain good
blot with paper towel. place on a pan in single layer freeze then place in zip lock bag remove all the air you can and seal
will keep 3 months or longer I havent had to keep it longer than 3 mo. jim b
Yes, you can. I do this with onions and green peppers, too. I chop them up and spread them out on a sheet pan and put 'em in the freezer. When they're frozen, I put them in zipper freezer bags. You can just put them directly into the freezer bags, but they clump up in a big, frozen clod that can be tricky to measure. I'll do that when I'm in a hurry. A couple of whacks on the counter can loosen them up enough to dig out smaller chunks, but it works best with the pan method. They'll last for several months.
If you cut it up and put in water in your refrigerator it will stay fresh. Not for 6 weeks but at least a week.
It may be a little mushier than usual when it's frozen because of the high water content, but celery can be diced and frozen for up to six months. If you have left-over onion, dice that up and throw it in with the celery, too.
Then you've got a good veggie combo to add to things like soups and stews. The texture isn't as important in those recipes as it would be in a stir fry or casserole where you're counting on the celery for crunch.
