Making toffee?!


Question: I have a delicious recipe for Almond Toffee Bark (from Gourmet magazine) but when I cook it to directions (until deep golden, about 12 mintues) it ends up being chewy rather than crunchy. Should I cook it longer? Stir it while cooking? Stir while cooling? Any thoughts would be helpful!

Candymaking requires precision (some would say an annoying amount of precision).

You can't do this by time - you have to get a candy thermometer and do it by temperature. Cook the mixture until it reads 300° - 320° F on the thermometer.

hree pounds soft brown sugar
half a pound salted butter
juice of one lemon
quarter pint boiling water (or a little more according to the consistency of the sugar)
Using an enamel or steel pan, gradually melt the sugar in the boiling water over a low heat. Stir it continuously with a wooden spoon until the sugar is thoroughly melted. (This usually takes from twenty to thirty minutes.) Remove the saucepan from the heat, add the lemon juice and the softened butter, and stir into the sugar. Boil this mixture fairly briskly for a further fifteen minutes without stirring it.

Gently drop a teaspoonful of the mixture into a cupful of cold water, and if it hardens at once it has reached the required consistency. Pour the mixture slowly on to a large, flat dish previously greased with butter. (Do not scrape the pan clean as this mixture might turn the toffee back into sugar.) Butter the hands and 'pull' the toffee into long, golden strands while hot. Cut into smaller pieces.

heres a recipe you could try and add what ever ya feel like ya almonds before setting

theres a certain temperature for hard candy I think its 300* on a candy thermometer. good luck toffee is soo yummy

paula dean made toffee on one of her episode's and it looked really easy, you can go to foodnetwork.com and search for it it aired yesterday 12-8-07. good luck

The recipe I use for toffee is 1 stick butter 1 cup brown sugar.
Bring to a rolling boil, stirring constantly, boil for 7 minutes.
Pour on buttered pan, top with chocolate chips and nuts, cover to let chips melt. Cool and break into pieces.
It's simple and delicious!
