Recipe for game soup please!?!
3 tblspn oil
1 onion finely chopped
2 slices bacon, chopped
3 lbs venison bones, neck
3 litres cold water
3 bay leaves, celery stalk (or leek leaves)
12-15 juniper berries
2 oz butter
9 oz Haunch of venison and/or meat from other game or rabbit
2 carrots finely chopped
4/5 stalks celerery, finely chopped
Juice of one lemon
Bunch of spinach
salt & pepper
Heat the oil in large pot & cook bacon & onion till lightly coloured add the venison bones & brown well. Add the water & bring slowly to a simmer & skim. Add the herbs & juniper berries, season & simmer for 3 - 4 hours. Strain.
Melt the butter and toss the meat/s till cooked but still pink in the middle. Remove & keep warm. Add the carrots & celery to the pan & toss until lightly browned/carmelized. Add the lemon juice then put all the vegetables into the strained broth & bring back to simmer & cook till vegetable are tender. Taste to adjust seasoning.
Place cut up meat in soup bowls & ladle broth over. Add chopped spinach on top & serve.
