Green Tea Soba?!
Probably should've though of that when I bought it...XD
Answers: So... I have some green tea flavoured soba noodles. That's buckwheat noodles in case you don't know, it's a Japanese thing. The problem is, I'm pretty sure normal soba dipping sauce will NOT taste good with green tea soba, so does anyone know what I can do with it?

I am a former chef and worked in Japan, and they have no real different taste over the regular, for a spark to regular soba dipping sauce add some yuzu or citrus juice, I have had it with lime and blood orange, zip it up with some Japanese pepper mix, I have one with yuzu in it.
The green tea soba will actually can be a bit less nutty as for the green tea, it is added in a powdered form when the soba dough is first made, my sauce includes sesame seed oil, soya, rice wine or vinegar, a dash of sugar, pickled ginger, I like spice so I use Thai chili flakes, a dash of sugar ( I use brown sugar).
I the heat mixture for 5 minutes, and strain all the bits out, even a bit of garlic is fine, I chill my soba on ice and do not let them sit in water after cooking very long, it dampens the taste, you can use them hot in Miso soup with tofu and a few green onions.
Donate them to the food bank.
I think it's a we call "chya soba" in Japan.(chya means green tea)
Maybe, i've never eaten that, but i think the way to eat is same as soba...
In japan, we eat soba with sauce for Japanese noodles or put it in soup made from seaweads, fish and soy souce.
AND when you eat both ways, you shoud put some green onion (cut into little pieaces)and some grated ginger.
it's more tastey...
you can buy soup made from seaweeds, fish and soy sauce at the store which have japanese stuffs...
i hope you can enjoy to eat it!!
