I don't know your children, but mine like tuna fish salad, this is made of mayonnaise and some onions, salt and pepper. They also like potatoes salad.

I find the most popular salad for my teen grandchildren is a taco salad made with or without hamburger; you will need tomatoe, lettuce,sour cream, cream cheese, taco mix, grated cheese, taco chips,and hamburger, if desired. Most recipe books have this recipe or try a recipe site on the net.

Romaine Lettuce, Sliced Almonds, Strawberries, Mandrain Oranges, grilled chicken cut into strips, cheddar cheese, and a balsamic vingergrette..mmmmm

Taco Salad:

- lettuce
- fave meat
- fave veggies
- fave dressing
- croutons ( or not )

CHICKEN MACARONI SALAD


2 1/2 pounds skinless, boneless chicken breast halves
2 cups macaroni
1 (15 ounce) can mixed vegetables, drained
2 cups shredded lettuce
3 cups mayonnaise
1/4 tablespoon dried basil
salt and pepper to taste
1 pinch garlic powder





1) In a medium skillet over medium heat, cook chicken until no longer pink and juices run clear. Let rest until cool enough to handle, then shred with two forks. Set aside
4 cups of shredded meat.

2) In a medium pot with boiling salted water cook elbow macaroni until al dente. Drain and rinse under cold water.

3) Meanwhile, in a large bowl mix together the cooked chicken, drained vegetables, shredded lettuce, and mayonnaise. Add basil, pepper, salt, and garlic powder to taste.

4) Add drained elbow macaroni to chicken mixture. Toss to coat.

5) Refrigerate for several hours before serving

KIDS POTATO SALAD


1/4 cup creamy salad dressing
1/4 cup apple juice
1 tablespoon dried minced onion
1 teaspoon dried dill weed
1 teaspoon prepared mustard
salt and pepper to taste
1 (15 ounce) can sliced potatoes, drained


1) Whisk together the salad dressing, apple juice, onion flakes, dill, mustard and salt and pepper. Pour over potatoes and toss to coat.


SERVES: 4

Build the teen a salad bar. In my experience, it's easier to convince kids to eat a salad if they can simply top them with things that they like. It's easy, nutritious, and fun for the teenager! You can store the ingredients (in the refrigerator depending on the ingredient), and let 'em build a salad every night to go with their dinner.

Get some of those small reusable/disposable containers from the grocery store. Fill them with various salad ingredients. Examples:

Chopped tomatos
Chopped hard-boiled egg
Sliced olives
Bacon bits
Diced cucumber
Chopped onion
Shredded cheese
Alfalfa sprouts

Have a few different dressings on hand; ranch is my personal favorite, and my nieces and nephews seem to love it.

Buy bagged lettuce mix, give them a bowl half filled with lettuce and let them build their own.

The tomatos and egg will only be "nice" in the refrigerator for about three days - they look kind of unappetizing after that - lol! But everything else will keep very well.

We keep a "salad bar" on hand all through the summer, and it works great. We use the same ingredients as a baked potato bar, or over fresh pasta.

Less work for you, more fun for the teenager, and everybody is happy.
