CAROL’S STOVE-TOP HAMBURGER PIE

1 -1/2 lbs. hamburger, crumbled
1 onion, chopped
Salt and pepper to taste
1 can cut green beans, drained
1 can tomato soup OR beef gravy
1/2 can water
Hot mashed potatoes

Saute onion and brown hamburger in a skillet. Season with salt and pepper. Stir well. Add green beans and tomato soup or beef gravy. Stir well. Add water and cook 4-5 minutes more. Serve over hot mashed potatoes with a salad, biscuits and gelatin with whipped topping for dessert.

CREOLE FRANKS

5 slices bacon, diced
1/2 c. onion, chopped
1 c. unsweetened pineapple juice
3/4 c. catsup
1/8 tsp. chili powder
1-1/2 lbs. frankfurters, sliced
1/4 c. green pepper, chopped

Cook the bacon in a large skillet, but do not crisp. Add onion and cook until tender. Add green peppers. Cook 2 minutes. Stir in pineapple juice, catsup and chili powder. Add frankfurters and simmer for 10 minutes. Serve over mashed potatoes or cooked white rice. Add a green salad, and crusty bread with butter to complete the meal.

PAPRIKA CHICKEN STEW

2 lbs. chicken (4 pieces)
1/2 tbsp. olive oil
1/2 tbsp. butter
1/2 red onion, cubed
3/4 tbsp. paprika
1/2 can (28 oz.) tomatoes (with juice)
1 cloves garlic, blanched and smashed
1/2 green pepper, cubed
Flour, seasoned with salt & pepper

Pre-heat oven to 350 F. Skin chicken. Dredge with flour. Sear chicken in skillet for 4 min. each side over medium-high heat. Add butter, onion & paprika. Cook for 6-7 minutes. Add tomatoes with juice and garlic. Season and bring to a boil. Transfer to an oven-proof casserole. Cover with foil, bake 30 minutes. Serve with buttered biscuits.

CHICKEN FRIED STEAKS

5 tbsp. all-purpose flour, divided
1/4 c. cornmeal
1/2 tsp. salt
1/4 tsp. pepper
4 beef cube steaks (about 1 pound)
1 egg white
1 tsp. water
2 tbsp. vegetable oil, divided

GRAVY:

1 tbsp. butter
2 tbsp. all-purpose flour
1-1/2 c. milk
1 tsp. beef bouillon granules
1/2 tsp. dried marjoram
1/4 tsp. dried thyme
1/8 tsp. pepper

Combine 3 tablespoons flour, cornmeal, salt and pepper; set aside. Coat steaks with remaining flour. Beat egg white and water; dip steaks, then dredge in cornmeal mixture. In a skillet, cook two steaks in1 tablespoon oil over medium-high heat for 5-7 minutes on each side or until crisp, lightly browned and cooked as desired. Remove steaks and keep warm. Repeat with the remaining oil and steaks. Meanwhile, for gravy, melt butter in a saucepan; stir in flour until smooth. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat to medium-low. Add bouillon, marjoram, thyme and pepper; simmer, uncovered, for 4-5 minutes, stirring occasionally. Serve over steaks with mashed potatoes and a vegetable. Makes 4 servings.

Ramen noodles and canned tuna. Get Koolaid mix drinks. Capri suns are cheap and good too.

egg noodles and chicken breast. like a chicken noodle soup. get chicken broth, onions, carrots, salt and pepper. and garlic egg noodles are like 2 dollars a bag. boil chicken first in broth add seasonings. you can use chicken wings or diced chicken breast. then add noodles last.

my step mom used to make tator tot casserole and meat loaf they are fairly simple and inexpensive. one bag tator tots and some ground beef in a baking dish layer the tots and hamburger and bake it till the tots turn brown. meatloaf, oatmeal hamburger and ketchup mix it together and make it a loaf then oven for one and a half hour you can substitute crackers for oats and also add one egg to the mix.

FETTUCCINE ALFREDO

1 lb fettucine
1/2 cup butter
2 cloves garlic, chopped
2 1/2 cups light cream or half and half
1 1/2 cups grated Parmesan cheese
1/2 teaspoon pepper
pinch of salt

Bring 4 quarts of water to a boil. Add 1 teaspoon salt when water is boiling.
Add fettucine. Cook uncovered 10-12 minutes (or according to package directions). Drain; cover and set aside.

IN a large skillet, melt butter. Saute chopped garlic over medium heat for 1 minute.

Stir in 1 1/2 cups cream or half and half (half and half = half milk/half cream).

Cook over medium heat 3-4 minutes, stirring constantly. When hot, stir in fettucine. Add remaining cream or half and half, Parmesan cheese, and salt and pepper. Stir to mix well.

After 1-2 minutes, when pasta is hot, serve accompanied by extra cheese for sprinkling, if desired.

Chicken stuff:
place in a crock pot:
Some chicken breast,
can of cream of celery
can of cream of chicken
and rice.
Let "crock"

Tater tot casserole
brown ground beef and add to a pot of cream of celery soup
I like to add some pepper and cyan pepper.
pour soup in to an oven safe dish.
cover soup mixture with French cut green beans
cover green beans with tater tots (or something like that)
bake for 30min at 350.

Top with cheese.

9 cups water, 1- 16 oz. bag of split peas, 1 onion, 1 chunk of diced or minced ham, and some parsley,garlic, and pepper. Throw in crock pot for 5 hours and you'll have an awesome pot of split pea with ham soup. Perfect for the cold weather and get some butter and hard rolls to go with it, you'll be in heaven. That's what I'm cooking right now cause it's 14 degrees out here. Enjoy!!

I would like to know too... it is very hard to come up with things when ur on a budget.. it seems like u eat the same things every week. We eat alot of pigs in a blanket.. biscuits, pepperjack cheese, and weinies.. roll them up in the oven at 350 degrees until they r golden brown. also speghetti(noodles, speghetti sauce, and ground beef), 3 way chili (noodles, and 2 cans of chili w/ beans), chili mac ( macaroni and cheese with a can of chili), or hamburger helper and read the tips on the box they tell u different things u can add.

POOR MANS TUNA CASSEROLE: make 1 box mac & cheese. Add 1 can of heated peas (or corn) add 1 can tuna. ~ My 2 kids still love this. It really is good. Enjoy.

Well, at this time of year, Turkey is very available at a very good price. Get the biggest one you can find, and roast it. Pull the meat off. Slice some up for the first meal. Serve with mashed potatoes, gravy and some veggies.

Bag the rest of the meat up tightly and freeze it.

Gently simmer the bones and scraps for stock. Use some of the meat and make a good soup with carrots, celery a little salt and pepper and a handful of barley or brown rice.

Use some of the frozen meat for a noodle casserole.

Use some of the frozen meat with gravy over hot rice or toast.

Spaghetti

one big can of Hunt's regular spaghetti sauce
one small can of tomato paste
one lb. hamburger
one pkg. breaksticks
spaghetti noodles

In a sauce pan mix the paste and sauce. Fill large sauce can almost halfway with water and add to mix. Add seasonings to your own flavor. Brown the meat and add to sauce. Of course you can add mushrooms, onions, or whatever you like.
I could serve 2 people 3 times. (partner is a big eater)
You can make surplus sauce and freeze.

A bag of potatoes is one of your cheapest meal sources (same with a bag of rice). Cooking cheaper doesn't mean low quality food - buy a high end cut of beaf, just a small steak and dice it for a stew. Here's an excellent Italian stew that is fabulous for kids and adults.

Peel 3-4 potatoes, cube into 1-inch cubes. Cut a good steak or stewing beef into 1-inch cubes in large pan. Put a large pan on high, add steak when pan is hot, stir occasionally until well browned. Remove from pan. Add small bit of olive oil and throw in 1 chopped onion and 2 cloves of garlic plus some Italian seasonings. Add steak and potatoes, salt & pepper and one can of canned tomotoes (diced). Add 1 tbsp HP sauce or any picante sauce. Simmer until potatoes are tender. Ten min. before serving add 1 green pepper diced and 1 zuchini sliced.

Serve with garlic bread (buy a french loaf, melt butter in microwave with diced garlic, spread on bread, wrap in tin foil and put in oven 350F - last 5 minutes uncover and Broil 400F for 3-5 min.

Look up other recipies for rice and small bits of meat (like Spanish rice or chinese fried rice with egg instead of meat)....

1) 1 package cubed steak (usually pretty cheap0
1 jar of brown gravy w/ mushrooms
Instant or real mashed potatoes
Cook the steak on low heat until almost done then add gravy and simmer for another 10mins. Use the remaining gravy for mashed potatoes.

2) 1 box frozen turkey in gravy (like the Encore kind)
Mashed potatoes
Toast
When everything is cooked, put mashed potatoes in the center of the plate, take 1 piece of toast and cut it diagonally, then put the 2 pieces on the outside of the mashed potatoes and top it all w/ the gravy.

3) 1 flat iron steak grilled to your preference; cut in strips (they are big enough for 3, a good cut, and cheap.)
Marinate (mesquite or any kind)
1 green bell pepper sautéed in strips
1 onion sautéed in rings)
1 can beans (black or pinto) cooked
Rice (any kind) cooked
Tortilla wraps warmed
Toppers (cheese, sour cream, green onoins, etc)
Theeeee best fajitas!!

Helpful hints:
- Have a salad and bread w/ your dinners. It balances your meals and fills you up and you may have leftovers of your main dish.
-Chili is great. Leftover chili is awesome on loaded baked potatoes, hot dogs, spaghetti, omelets,
- Dress it up. When I make chicken sandwiches (the breaded frozen kind) I make a spicy chicken and add mayo, hot sauce, and onion.
