It's not necessarily the recipe that makes a difference. It's more often the heat. Professional kitchen wok burners (gas) are rated at 100,000BTU and up (the larger the wok you use, the more heat you need). Typical home gas cooktops have outputs of 15-25,000BTU, maybe a bit more (NOTE: fire hazard goes up as heat output does).

This difference in heat output puts the home chef at a big disadvantage, because wok cooking must be done very quickly at very high temperature, and this is difficult with lower-output home burners.
