Fried Pickle slices?!
Answers: I went to a very nice restaruant and had fried pickles. Does anyone know how to cook them?

Fried Dill Pickles Recipe
1 pint sliced dill pickles, undrained
1 large egg, lightly beaten
1 tablespoon all-purpose flour, plus 1 1/2 cups all-purpose flour
1/2 teaspoon hot sauce
1 1/2 to 2 teaspoons ground red pepper
1 teaspoon garlic powder
1/4 teaspoon salt
1 teaspoon paprika
Vegetable oil
Drain pickles, reserving 2/3-cup pickle juice. Press pickles between paper towels. Combine 2/3 cup pickle juice, egg, 1 tablespoon flour, and hot sauce. Stir well and set aside.
Combine 1 1/2 cups flour with ground red pepper, garlic powder, salt, and paprika. Blend well. Dip pickles in egg mixture, then dredge in flour mixture. Fry coated pickles in 375-degree oil until golden brown. Drain on paper towels.
FRIED PICKLES
12 dill pickle spears
Essence, recipe follows
3 cups flour
2 egg yolks
3/4 to 1 cup beer
Pinch of baking powder
Salt and pepper
Oil for frying
Preheat the fryer. Season the pickles with Essence. Season 1 cup of flour with Essence. In a mixing bowl, whisk the yolks and 3/4 cup of the beer. Season the mixture with salt and pepper. Whisk in enough flour to form a batter. If the batter is too thick add the remaining beer to thin the batter. Dredge the spears in the seasoned flour. Dip the spears in the batter, letting the excess drip off and coating the spears completely. Gently lay the spears in the hot oil and fry until golden brown, about 3 to 4 minutes. Remove the spears from the oil and drain on a paper-lined plate. Season the spears with Essence. Serve the spears with ketchup
Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Yield: 2/3 cup
Yield: 4 servings
Prep Time: 12 minutes
Cooking Time: 5 minutes

Wesson oil for deep frying
Combine first 5 ingredients, stirring well. Set aside. Combine 3 1/2 cups flour, salt and pepper, stirring well. Dip pickles in milk mixture and dredge in flour mixture, repeat process. Deep fry in hot oil, 350 degrees until pickles float to surface and are golden brown. Drain on paper towels.

You chop the pickles in the fashion that you would like (Not diced doesn't work), then you skillet them SLIGHTLY SLIGHTLY enough that there is barely any difference (gets the pickle juice going), then you light fry them, (deep fry will kill the flavor).

There are a lot of recipes for them out there, try Southern cookbooks. Pretty much any batter will work. I usually dip the pickles in egg and then dredge them in a dry breading mix. You could also use any sort of wet batter. I have found that the breading stays on much easier if you pat the pickles dry before coating them.

2. Heat oil to 350 degrees F (175 degrees C) in a deep-fryer or heavy deep skillet. Dip pickle slices into the milk mixture, then into the flour mixture. Repeat dipping.
3. Place the pickles carefully into the hot oil. Avoid over crowding by frying in several batches. Fry until pickles float to the surface, and are golden brown. Remove with a slotted spoon, and drain on paper towels.

Canola oil works best. Dip your pickle slices in buttermilk mixed with melted butter, then toss into a bowl of Bisquick and let drain on a paper towel. Then place into a skillet of 1/2 inch Canola oil heated until a drop of water sizzles. Deep fry until golden brown, remove with slotted spoon or spatula, and drain on another paper towel.
Fried Pickles go very well with Ranch Dressing or Sour Cream flavored with Dill Weed and Onion Salt. Yum!
OMG aren't they great. I'm from Houston, Texas, so of course I love them. Must be chips (slices) not spears; DILL, not sweet and dip them in Ranch dressing. YUM!
I have a t-shirt that I got in Nashville that say "Got Pickles?". It is for the deicious fried pickles we got while we were at the Wild Horse Saloon down there. They sounded gross to me at first, but ended up being yummy.I think you will just have to fine tune your own recipe.
