I need help with a cookie recipe.?!


Question: I want to make cookies with jelly in the center. All I remember is flour, butter, maybe eggs?, vanilla? Then chill the dough. Roll in balls, with jelly green and red jelly.
Need big time help!

I always made these when I was little because they were so easy and fun! I'm sure there are other ways... but this recipe from cooks.com always worked for me!

JAM THUMBPRINTS
2/3 c. butter
1/3 c. sugar
2 egg yolks
1 tsp. vanilla
1/2 tsp. salt
1 1/2 c. flour
2 slightly beaten egg whites
3/4 c. chopped walnuts
Strawberry or cherry jam

Cream together butter and sugar until fluffy. Add egg yolks, vanilla, and salt; beat well. Gradually add flour, mixing well. Shape in 3/4-inch balls. Dip in egg whites and roll in nuts.

Place about 1-inch apart on greased cookie sheet. Press down centers with thumb. Bake. Cool slightly; remove from pan and cool on rack. Fill centers with jam.

Easiest "shortcut" way is to get the refrigerated sugar cookie dough; roll it out, spread with jelly and roll up and bake.

Jelly Cookies recipe yield: 3 dozen

INGREDIENTS
1 cup butter, softened
2 1/2 cups all-purpose flour
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 cup your choice of preserves
1/3 cup confectioners' sugar for decoration

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets.
Cream the butter with the white sugar and brown sugar. Beat in the egg and vanilla.
Mix the flour and baking powder together. Stir in the flour mixture into the butter mixture and combine.
Form dough into 1 inch balls and place on the prepared baking sheet. Make an indentation in each cookie and fill with jam. Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Let cool completely and sprinkle with confectioners' sugar.
