I'd use about 20 sprigs of fresh thyme.

There's no particular/specific count for a bunch.
Depending upon the size of your springs, I'd use anywhere from 5 to 10 (personally I'd use 10), more if you really like thyme.

A "bunch" of fresh thyme usually averages 6 to 10 sprigs from the produce section in the store. For your chicken I'd go with not more than 6 sprigs.
