How to make vanilla custard ?!


Question: BAKED VANILLA CUSTARD

3 eggs, slightly beaten
1/4 c. sugar
1/4 tsp. salt
1/2 to 1 tsp. vanilla
2 c. skim milk, scalded
Ground nutmeg for garnish

Combine first 4 ingredients, beating well. Gradually add milk, stirring constantly. Pour into 6 (6 ounce) custard cups. Sprinkle with nutmeg.
Place custard cups in a large baking pan; pour hot water into pan to a depth of 1 inch. Bake at 325 degrees for 40-45 minutes or until knife inserted halfway between center and edge of cup comes out clean. Remove cups from water and cool. Chill thoroughly.

4 cups milk and/or cream (whatever ratio preferred from skim milk to half-and-half cream)
1 teaspoon vanilla
1 teaspoon almond extract
5 eggs

In oven-proof 1-1/2 quart baking dish, combine sugar and milk/cream. Scald in microwave oven for 10 minutes, stirring often to dissolve sugar. Meanwhile beat eggs in separate bowl. Add vanilla and almond extract. Slowly pour milk/cream mixture into beaten eggs. Return to 1-1/2 quart baking dish, set dish in pan of hot water, and bake in oven at 325 degrees for approximately 1 hour until silver knife inserted into center comes out clean. Sprinkle with nutmeg. Chill. Serve plain or topped with fresh fruit
