So make potato soup. Just cut up the potatos and onions, boil them until tender. Leave the water in and put in a cup or two of milk, put in a nice glob of butter, salt and pepper to taste. If you want it thicker, add some instant mashed potatos. I make it all the time. Make some cornbread to go with it...nothing better!

how about a potato bake with onions and garlic? Topped with mozzarella..... its very nice and as simple as it sounds

***********POTATO CHEESE SOUP
4-5 large potatoes
1 cup sour cream
2 cans cheddar cheese soup
2 1/2 cups Milk
Salt and pepper
Beef bouillon
Garlic powder
Peel and cut potatoes into cubes. Boil potatoes until soft and drain potatoes. With potatoes in pan add soup and sour cream. Gently mix until blended. Add milk into potato mixture until combined liquid barely covers potatoes. Add salt, pepper, beef bouillon, and garlic to taste. Heat on medium heat until soup is warm enough to eat.
DO NOT BOIL.
Saltine crackers are a good compliment to this soup.

Remove from heat and cool if you want. Blend the cooked mixture until smooth. Return to the saucepan; add 1/4 cup butter, cream and chives. Check for seasonings. Heat, but do not boil or the cream will curdle

Find a recipe for leek and potato soup (vischisoise) and substitute onions for the leeks. Should work fine

Hearty Potato, Bacon and Onion Soup

INGREDIENTS

* 4 slices bacon, diced
* 2 tablespoons margarine
* 3 onions, chopped
* 2 tablespoons all-purpose flour
* 4 1/4 cups water
* 1 cube vegetable bouillon
* 4 potatoes, cubed
* 2 egg yolks
* 1 1/3 cups sour cream
* 1 tablespoon chopped fresh parsley

DIRECTIONS

1. In a large saucepan over medium high heat, saute the bacon for about 7 minutes, or until lightly browned. Reduce heat to medium, add the butter or margarine and onions and saute for about 5 minutes, or until onions are tender. Add the flour and stir well for one minute.

2. Remove saucepan from heat and gradually add the water, stirring well. Return to stovetop, raising heat to high. Add the bouillon and potatoes, bring to a boil and then reduce heat to low. Simmer uncovered for about 10 minutes, or until potatoes are tender.

3. In a small bowl, combine the egg yolks and the sour cream and mix together. Gradually add this mixture to the soup, stirring well. Heat through, but do not boil. Stir in the parsley just before serving.

POTATO - ONION SOUP

2 c. diced potatoes
3 c. water
2 tsp. salt
1 lg. onion
1 c. milk
1 can cream of celery soup
Black pepper to taste

Boil potatoes, onion and salt in the water. When vegetables are tender. Add milk, celery soup and pepper. Heat before serving (but do not boil).
