Boil carrots, onions, potatoes, celery. If you like stewed tomatoes in your soup put that in also. whatever seasoning you like personally I like Mrs. Dash. Add enough water to cover good. Boil on slow boil. If you only want broth, then strain your veg. out of the broth. Refrigerate for up to 3 or 4 days.

Use the skins and peels from the vegetables you'll be including in the dish/s you'll be making. Such as celery, onions and carrots, aromatics like garlic and fresh or dried herbs. Brown these in a little oil and then add water and cook for an hour or two. Strain out the vegetable matter and use the stock or chill or freeze for later use. Ice cube trays or little ziploc bags are a great way to freeze small quantities of stock to add to rice or sauces.

VEGETABLE BROTH

This flavorful stock can be served as is or used as a base for sauces or soups.

1 tbsp. butter
1 c. onion, chopped
1 c. carrot, chopped
1 c. white turnip, chopped
1 c. parsnip, chopped
2 c. celery, chopped
3 sprigs parsley
2 whole cloves
1 bay leaf
1 clove garlic
1 tsp. thyme
1 tsp. salt
1/4 tsp. pepper
4 dried tomatoes
Cold water to cover

Heat butter in heavy soup pot and saute onion over low heat until golden and tender. Add remaining ingredients and bring to boil. Reduce heat and simmer partially covered for at least 1 hour. Strain broth through a fine mesh strainer, pressing solids to extract all liquid. Store in refrigerated container.
