Good evening.

The apple and the mustard may seem unusual but they compliment each other very well.

2 slices country-style white bread, sliced 1/2-inch thick
3 ounces farmhouse Cheddar, sliced
unsalted butter
3 slices bacon, cooked to desired doneness
some green apple, thinly sliced
Dijon mustard

Heat griddle or large skillet over medium-low heat. Alternatively you can use your panini press if you have one.
Assemble sandwich: Generously spread Dijon on 4 slices of bread. Top with slices of Cheddar, 3 pieces of bacon, apple slices and additional Cheddar. Place the remaining bread on top and spread with butter. Place on skillet buttered-side down and butter the remaining side. Cook until cheese is slightly melted and bread is browned. Flip the sandwich and continue to cook until until cheese is thoroughly melted and sandwich is golden brown.

A triple decker grilled cheese and BLT sandwich.

1. Use three super thick wheat or multi-grain slices of bread
2. Place two slices of cheddar cheese on top of one slice of bread
3. Top with the second slice of bread
4. Layer lettuce (I like Romaine), sliced tomatoes and 3-4 strips of cooked bacon on top of the second slice of bread
5. Apply mayo to the third slice and top off the sandwich
6. Grill for a few minutes on each side until lightly browned

I love Ruben sandwiches...they are the best. Just like you!
Love, honey
