what happened?
Sounds like a heat issue. Pancakes are suppose to be holey on the top when they are ready to flip. Always have the griddle oiled and med hot when you pour the batter on there, that is a key step!.And don't over stir the batter it's suppose to be thick and lumpy. Wait till the top gets somewhat firm & holey but at the same time watch the heat so the bottom doesn't burn. Make a test pancake, experiment by adjusting the heat before you finish the actual pancakes. Practice & in a few batches you'll be the pancake queen!
Here are a couple videos that show you how.

turn the pancakes over when there is bubles on the top...
Hot buttered pan........Without "Bubbles, Bubbles showing on the top before turning" will cause toil and trouble when you turn the pan cakes.
(ps...don't over-mix the batter and let it rest for 5 minutes before cooking)
