butterscotch brownies

Servings: Makes 16 brownies.
Ingredients
1/4 cup butter or margarine
1 cup packed brown sugar
1 teaspoon vanilla
2 tablespoons milk
1 large egg
1 cup all-purpose flour*
1/2 cup chopped nuts, if desired
1 teaspoon baking powder
1/2 teaspoon salt
Preparation
1. Heat oven to 350°F. Grease bottom and sides of 8-inch square pan with shortening.
2. In 1 1/2-quart saucepan, melt butter over low heat; remove from heat. Stir in brown sugar, vanilla, milk, and egg. Stir in remaining ingredients. Spread in pan.
3. Bake about 25 minutes or until golden brown. Cool 5 minutes in pan on wire rack. For brownies, cut into 4 rows by 4 rows while warm.
*If using self-rising flour, omit baking powder and salt.

Delicious brownies with butterscotch chips and coconut.
INGREDIENTS:
1/2 cup butter, room temperature
2 cups light brown sugar, firmly packed
2 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup chopped pecans
1 cup flaked coconut
1 cup (6 ounce package) butterscotch or chocolate chips

Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating after each addition. Combine flour, baking powder and salt; add to creamed mixture; mix until smooth. Stir in vanilla, chopped pecans, coconut, and butterscotch chips. Spread butterscotch brownies batter in a greased and floured 13x9x2-inch baking pan. Bake at 350° for 25 to 30 minutes. Cut butterscotch brownies into bars while warm. Makes about 24 butterscotch brownies, (2-inch squares).

1 (6 oz.) pkg. butterscotch chips
1/4 c. butter
3/4 c. flour
1/3 c. brown sugar
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. vanilla
1 egg
1 (6 oz.) pkg. chocolate chips
1 c. miniature marshmallows
1/2 c. chopped nuts
In a large saucepan, melt butter and butterscotch chips over low heat; stir constantly to prevent scorching. Remove from heat and cool to lukewarm. Stir in flour, brown sugar, baking powder, salt, vanilla and egg blending well. Fold in chocolate chips, marshmallows and nuts. Spread into a greased 8 inch square pan. Bake at 350 degrees for 20 to 25 minutes; do not overbake. The center will still be soft when the brownies are removed from the oven.
