I need good SIMPLE recipes for pan fried or baked Tilapia and Salmon.?!

I like to squeeze fresh lemon on mine and fresh dill.

I also like to use my blackened seasoning and sprinkle it on and bake @ 350 degrees for about 15 minutes. Tilapia is so thin it does not take long at all.

Tilapia has such a nice flavor on it's own you do not need to terribly much or it overpowers the fish.

Now salmon I like to get some brown sugar and soy sauce. Make a marinade and soak it for up to four hours or overnight if you can. This is a classic bourbon sauce without the bourbon. If you want bourbon add it too.

If I don't use the brown sugar and soy sauce I do the same with Salmon as I do Tilapia.

Place the Salmon on a rack and bake them for about 20 minutes @ 350 degrees.

For the Tilapia you can also fry it. It does well in a egg, mustard and hot sauce bath. Dip the fish in the egg bath and then roll in seasoned flour. Fry to a golden brown. The hot sauce will not be detected and the mustard allows it to brown beautifully. Good enough taste so you don't even want the tarter sauce or mayo sauce.

4 or so frozen tilapia fillets
1/4 cup mayo
2 tbs. pesto
1 tomato

preheat the oven to 450F
place frozen fish in 13x9 baking dish
spread combined mayo and pesto over
sprinkle with tomato
bake for 15min. or until the fish flakes easily

you can get as simple as a little oil and lightly seasoned with salt and pepper...(very little oil...you can use EVOO) and fry on each side...it doesnt take long at all...just cook until flaky...a few minutes on each side...depending on size...enjoy

I make this simple Tilapia dish a couple of times a month at least. Even my non-fish lover husband really likes it.

* 4 Tilapia filets

* In a mini food processor, blitz up about a 1/2 - 3/4 cup of Pumpkin Seeds (the green, raw ones) with salt & pepper. Add enough olive oil to make the seeds stick together.

* Cover each Tilapia filet with this paste, and bake (at 375) until the fish flakes easily with a fork.

* Squeeze fresh lemon juice on them before serving.

ORANGE ROASTED SALMON

2 oranges, sliced into rounds
1 onion, thinly sliced
1 1/2 Tbs. olive oil
5 6 oz. salmon fillets
1 Tbs. lemon pepper
1-1/2 tsp. garlic powder
1 Tbs. dried parsley
1/2 C. orange juice
1-1/2 Tbs. lemon juice
1 Tbs. honey

Preheat the oven to 400 F. In a small bowl or cup, stir together the lemon pepper, garlic powder, and dried parsley. Place the slices from one of the oranges in a single layer in the bottom of a 9x13 inch baking dish. Place a layer of onion slices over the orange. Drizzle with a little bit of olive oil, and sprinkle with half of the herb mixture. Place the dish in the pre-heated oven, and roast for about 25 minutes, or until the onions are browned and tender. Remove the dish from the oven, and increase the temperature to 450 F. Push the onion and orange slices to the outer edge of the baking dish, and place the salmon fillets in the center. Season with the remaining half of the herb mixture. Whisk together the orange juice, lemon juice and honey in a small bowl. Pour evenly over the salmon. Bake for 12-15 minutes in the pre-heated oven, or until the salmon is opaque in the center. Remove fillets to a serving dish, and discard the roasted orange. Garnish fillets with roasted onions and fresh orange slices.

Yield: 5 servings.

BAKED DIJON SALMON

1/4 c. butter, melted
3 tbsp. Dijon mustard
1 1/2 Tbs. honey
1/4 c. dry bread crumbs
1/4 c. finely chopped pecans (optional)
4 tsp. chopped fresh parsley
4(4 oz.) fillets salmon
Salt and pepper to taste
1 lemon, for garnish

Preheat oven to 400 F. In a small bowl, stir together butter, mustard, and honey. Set aside. In another bowl, mix together bread crumbs, pecans, and parsley. Brush each salmon fillet lightly with honey mustard mixture, and sprinkle the tops of the fillets with the breadcrumb mixture. Bake salmon 12-15 minutes in the preheated oven, or until it flakes easily with a fork. Season with salt and pepper, and garnish with a wedge of lemon. Makes 4 servings.
