Tell you what. I am going to copy all these recipes and try them out to see if they can run with mine. I just LOOOOOOVE homemade cornbread!! Anybody ever eat it fried? Delicious.

Super reliable:

1 cup corn meal
1 cup white flour
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt

mix above dry ingredients together in a bowl.

mix in another bowl:

1 cup milk
1 egg
1/4 cup vegitable oil (I use olive oil)

mix the liquid ingredients into the dry, and try not to overmix.

Bake in a greased 8 or 9 inch round pan or you can also use a 10 inch square pan or even a 12 cast iron skillet if you want. Bake in a Pre-heated oven at 400 degrees F. for 15-25 minutes depending on the pan you use.

2 cups yellow cornmeal
1 1/2 cups flour
2 teaspoons salt
2 teaspoons baking powder
1 teaspoon baking soda
2 tablespoons sugar, optional
3 eggs, beaten
1 tablespoon vegetable, for skillet
2 cups milk
1/4 cup melted butter
melted butter for brushing top
PREPARATION:
Preheat oven to 425°. Put oil or shortening in a 10-inch iron skillet and place in the oven to preheat while making batter.
In a mixing bowl, combine cornmeal, flour, salt, baking powder, soda, and sugar, if using.

In another bowl, whisk together the eggs, milk, and butter. Combine with dry ingredients and stir until all ingredients are moistened. Batter will be like a thick pancake batter.

Carefully, with heavy oven mitts, lift skillet out and turn to coat all of the inside surface with oil. Pour in batter and return to oven. Bake for about 20 to 25 minutes, until browned. A toothpick inserted in center should come out clean.

I have found the best recipe to be is, to make the recipe on the bag of cornmeal, but to also add a couple dashes of sugar to give it a hint of sweetness...when I was growing up, my mother would slice the cornbread in half after she took it from the oven and put butter in it, and it was SO GOOD!

No I am a yankee..LOL! My recipe is the bag in the store..add egg..water..and that is it Tina! HAHAHAHA!!!!!! Sorry Senorita!!!!!!!!!!!!!!!!!!!!!!!

Old Fashioned Cornbread

Serving Size : 10

4 cups Cornmeal
2 teaspoons Baking soda
2 teaspoons Salt
4 Eggs -- beaten
4 cups Buttermilk
1/2 cup Bacon drippings




Combine dry ingredients; add eggs and buttermilk, mixing well. Stir in bacon drippings. Heat a well-greased 10 1/2 inch cast-iron skillet in a 400 degree oven for 3 minutes or until very hot. Pour batter into hot skillet. Bake at 450 for 40 minutes or until golden brown.
