Help! Need Quick, Yummy Potluck Casserole?!
Do you know a quick, YUMMY casserole-type dish suitable for a local holiday potluck?
Pressed for time now, so I'd prefer something easy please, but festive + significant, and healthy to boot. Hmmm, I usually think of casseroles as cheesy + meaty so maybe the 'healthy' request is an oxy-moron?
A side would be fine, if not a main, but I'd rather not do dessert.

Chicken and Rice Casserole:
1 can chicken breast meat (Swanson)
1.25 cups uncooked rice
1 can French Onion Soup (Campbells)
1 can Chicken Broth (Campbells)
1/2 stick butter
Put rice in casserole dish, cover with chicken, pour in soups, cut up butter and put on top. Cover and bake at 350 for 1 hour and 15 minutes. Delicious. Nothing is easier.
Lasagne works well, and a lot of people love that! Grab a package of noodles and the recipie is on the back!
Or, buy 4 boxes of Stove-top stuffing. Very easy to make, and EVERYONE loves stuffing!!
This is super easy but it is NOT healthy!
Tater tot casserole: Simply layer tater tots with partially diluted concentrated mushroom soup and grated cheese. On the top, spread a container of sour cream and cottage cheese. Top of with more cheese and bake until bubbly. You don't even need to pre-cook the tater tots. Put them into the casserole frozen. While I admit this dish is a heart attack waiting to happen, it is foolproof and always goes over well. Out of guilt, I usually throw in some frozen mixed veggies!

cans of green beans ( whatever brand you like, and how many ever you are going too need lol)
the same with mushroom soup!!! lol...
mix them all togather...
Put in a baken dish and bake in oven for about 30 or 35 mins on 350.. top with dried onions!!!!!!!

How about a 7 or more layer salad? It is definetly healthy! You just layer lettuce in the bottom of dish, top with thawed peas, shredded carrots, mushrooms, black olives, anything you want, then top that with hidden valley dressing (mix as directed on packet) (1 cup milk, & 1 cup mayo0 I think, then top with shredded cheese and real bacon bits.
When I fix this it never lasts long, it is delicious!!

Worlds best mac and cheese...my X-husband called me for this recipe...Put a big "corning wear" dish on the burner. You can cook and bake in it. Melt a stick of butter. Pour in 1 box, (16 ounce), of macaroni into it uncooked. Brown the macaroni a bit in the butter. add 1 pound grated cheese.and mix. chedder is best, white. Then 1 teaspoon salt, 1 teaspoon pepper . Then pour over it all milk. pour until it is almost covered. Cover and bake at 350 . It takes about an hour. This is rich delicious old fashioned. Not creamy, baked.
ok broccoli casserole- you need 3cans cream of mushroom, sharp cheddar cheese-i buy 2 cup bag, use dehydrated onion in spice section-whole bottle. 2eggs, 1 16lb bag of broccoli cuts, frozen ritz crackers butter- pre heat oven to 350 deg.1st put your broccoli on to boil -meanwhile crush your ritz cracker{2 stacks} melt about a stick and a half of butter -then mix butter and your ritz til its all crumbly-strain your broccoli well put in a bowl then add cr of mush cheese onion and eggs mix all ingredient well. Then put in a foil roasting pan top with the ritz crumbs bake about 45 mins till pretty firm or set pretty well. this is too simple
I love this squash casserole. I couldn't find my own recipe, but this is close. If you want you can add some chicken to it to make it more of a main dish.
Squash Casserole
INGREDIENTS:
1 1/2 pounds yellow crookneck
squash - peeled, seeded, and
sliced
1 onion, thinly sliced
1 carrot, grated
1 (10.75 ounce) can
condensed cream of chicken soup
1 (8 ounce) container sour
cream
1 cup butter
7 1/2 ounces herbed dry bread
stuffing mix
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Cook squash and onions in boiling salted water until tender. Drain and mash them with 1/2 cup butter or margarine. Stir in sour cream, grated carrot and cream of chicken soup. Set aside.
3. Melt remaining 1/2 cup butter and stir it into the stuffing mix. Pour half of the stuffing mix into the bottom of a 9X13 glass baking pan. Pour the squash mixture over the top of the mixture, and the rest of the stuffing mix on top of the squash.
4. Bake for 30 minutes, until golden brown and bubbly.
the chicken and rice casserole is very good and yummy and easy. Use pieces of boneless chicken for a party.
I don't use butter I use a can of mushroom soup instead of the broth. Maybe some milk too
BAKED BEANS:
2 cans pork n beans
1 or 2 cups of dark brown sugar
drizzle ketchup over top
sprinkle on some onions, salt n pepper to taste
If you have some strips of bacon, lay a few strips accross...
bake about 2 hours
YUMMY
I say potato olive gratin.
3 yukon gold potatos
4 red potatos
1 cup of half half
1 cup of parmasan or any white cheese
1 1/4 olives
Salt and pepper
Preheat 400F oven.
Butter your baking tray
Slice potatos horizon about half a cm.
Layer your potatos, olives, milk, cheese, pepper, salt in that order, then repeat till you got no more ingredients.
Cover in foil, for 1 hour or golden brown. Take it out put it in the table and leave.
Potluck Casserole
Ingredients:
2 lbs ground beef
4 cups onions, chopped
2 cloves garlic, minced
3 medium green peppers, chopped
4 cups celery, diced
1 (5 3/4 ounce) jar stuffed green olives, undrained
1 (4 ounce) can mushrooms, drain
1 can condensed tomato soup, undiluted
1 (8 ounce) jar picante sauce
1 (18 ounce) bottle barbecue sauce
2 tablespoons Worcestershire sauce
4 cups medium egg noodles, cooked and drained
1 cup cheddar cheese, shredded
Directions:
1.Brown ground beef, onions and garlic; drain.
2.Add remaining ingredients except cheese; mix well.
3.Place in a greased casserole dish and cover.
4.Bake at 350 degrees for 1 hour or until hot and bubbly.
5.Sprinkle with cheese just before serving.

Heart-Healthy Casserole W/ Roasted Veggies
Ingredients:
4 cups vegetables, roasted and coarsely chopped (potatoes, carrots, parsnips, and onions)
2 tablespoons sodium-free seasoning (I like Paul Prudhomme's Pizza & Pasta Magic)
8 ounces soy crumbles (I like Morningstar 'cuz it tastes just like real sausage)
4 eggs, whole
8 egg whites
Directions:
1.Preheat oven to 375 degrees.
2.Place roasted veggies in bottom of ungreased non-stick (or greased if not non-stick) 9 x 9 baking dish.
3.Sprinkle seasoning evenly over veggies.
4.Layer sausage crumbles over seasoned veggies.
5.Beat eggs and egg whites together and pour evenly over sausage.
6.Bake until egg is cooked through, approximately 35-40 minutes. There should be no runny egg visible.
7.Cool slightly, then serve. Top with cheese if desired.

Spicy Pumpkin and Hazelnut Dessert Casserole
Ingredients:
1 (16 ounce) can pumpkin puree
1 cup firmly packed light brown sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 cups half-and-half
3 large eggs
1 cup chopped hazelnuts
2 tablespoons butter, melted
whipped cream
Directions:
1.Butter a 1 1/2 quart casserole dish and set aside.
2.In a large mixing bowl, add the pumpkin; set aside.
3.In a small mixing bowl, add the brown sugar, salt, and spices; stir to mix; add to the pumpkin puree and stir until well blended.
4.In a medium mixing bowl, add the half-and-half and eggs; whisk until frothy.
5.Add to the pumpkin mixture; stir to blend.
6.Transfer mixture to prepared casserole dish.
7.Sprinkle hazelnuts over the top.
8.Drizzle with melted butter.
9.Bake in a 350° oven for 50-55 minutes or until knife inserted in the center comes out almost clean.
10.Let cool.
11.If desired, top with whipped cream.
12.Note--may add a tablespoon or two of rum or bourbon to the pumpkin mixture before baking if desired.
