This is presentable enough for a holiday dish, delicious, easy and you can make ahead and freeze if you have to:
Ingredients
1 pound ziti
1 tablespoon olive oil
1 large yellow onion, diced
3/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 pound lean ground beef
3 cloves garlic, minced
1/2 cup chopped fresh oregano (optional)
1 26-ounce jar pasta sauce
1/2 cup (2 ounces) grated Parmesan
1 15-ounce container ricotta
1 10-ounce box frozen spinach, thawed and squeezed to remove liquid
1 cup grated mozzarella
Preparation
Cook the ziti according to the package instructions.
Heat oven to 400° F.
In a large pot, over medium-low heat, heat the oil. Add the onion, salt, and pepper. Cover and cook until the onion is softened, 5 to 7 minutes. Add the beef, increase heat to medium-high, and cook until no trace of pink remains, 5 to 8 minutes. Drain any remaining liquid. Add the garlic and oregano (if using) and cook for 2 minutes. Add the pasta sauce and heat for 3 minutes. Remove from heat. Add the cooked pasta and toss to coat. Add the Parmesan, ricotta, and spinach and toss again. Spread the mixture into a 9-by-13-inch baking dish or individual ramekins and sprinkle with the mozzarella. Bake until the mozzarella melts, about 15 minutes.
Tip: If you prefer, substitute Italian sausage for the ground beef and chopped broccoli for the spinach.
To Freeze: Assemble (but do not bake) the casserole. Cover tightly with two layers of aluminum foil. Store for up to 3 months.
To Reheat: Thaw overnight in the refrigerator or thaw partially in the microwave. Cover and heat in a 350° F oven for 1 hour. Uncover and heat until the mozzarella melts, about 10 minutes more.

Ricotta stuffed shells. I don't know the recipe though. Christmas Eve is the one time of year that my husband cooks.

lasagna is a traditional american christmas favorite-
I brown 1/2 pound ground beef and 2 hot and 2 mild italian sausages ( then cut them lengthwise and in slices- small pieces) and add 1 jar spaghetti sauce (use a good brand- I* use barilla's spicy tomato sauce- you could use whatever you like)
Boil lasagna noodles- I ALWAYS break a few, so even though I only end up using 9, I usually cook about 12 as directed on the package and when done, lay on a strip of aluminum foil which you have coated with cooking spray.
Mix 2 cups ricotta cheese with 2 eggs and 2 tablespoons chopped parsley ( use fresh)
put about 1/2 cup meat sauce in bottom of 9 x 12 pan- and layer 3 noodles on top ( you of course can adjust this depending on size of pan..) and then spread a layer of ricotta( I do big drops all over and then spread them together, top with the second layer of noodles, then a layer of ricotta, a layer of meaty sauce, a layer of noodles, ricotta, meaty sauce- and cover the sauce with a layer of shredded mozzarella.
Cover with foil and cook 30 minutes, Uncover and cook 25-30 more minutes until sides are brown and bubbly.
Try pasta in sardines. Bottled sardines in olives is the best for this recipe. You can roast garlic to top the pasta to add more flavor...
Macaroni & cheese is traditional on our Christmas dinner table.
1 lb elbow or small shell pasta,
6 tbsp butter
6 tbsp flour
salt & pepper
3 c milk, warmed
12 oz Velveeta, cubed,
12 oz Monterey Jack or Colby-jack cheese, cubed
Cook the pasta, drain & set aside
Melt the butter in the microwave in a 4 qt casserole dish
Add the flour, stir with a whisk until it forms a paste. Microwave for 30 seconds
Add the warmed milk, whisk until everything is mixed.
Microwave for two minutes, then whisk. Repeat until sauce starts to thicken.
Stir in cheeses, stir until melted.
Add salt and pepper, and 1 tsp dry mustard if desired.
Stir in the pasta until everything is well mixed.
Top with buttered bread crumbs if desired
Bake at 350 until bubbly and slightly brown on top, 30-40 minutes.
