Try this.........
2 oz / 50g butter
2 large onions
1lb 5oz / 600 g broccoli, trimmed
1/2 tsp each of salt, sugar and nutmeg
2 pts / 1.2 litres weak vegetable stock or chicken stock
3 tbsp double cream
5oz / 150g blue Stilton, crumbled

Melt the butter in a large saucepan. Add onions, broccoli, salt, sugar and nutmeg. Cover and steam gently on a low heat for 20 minutes, stirring occasionally.
Add the stock to the pan and bring to the boil. Reduce the heat immediately and simmer for 10 minutes.
Blend until smooth. Return to the pan and stir in the cream and Stilton. Stir over a low heat until the cheese is well combined giving a lovely smooth soup

STILTON, CELERY AND BROCCOLI SOUP

1 piece celery
1head of broccoli
1 pint chicken stock
2 ounces of Stilton cheese
salt and pepper to taste
1/2 pint double (or heavy) cream

in a food processor or blender, purée vegetables and stock together; add cream and Stilton. Blend for a further 2 mins until a thick, creamy consistency is achieved.
Add salt and peper to taste.

Serve with a crusty bread roll.

Broccoli and stilton soup with stilton croutons

350g/12oz broccoli, florets and stalks cut into small pieces
400ml/14fl oz vegetable stock
25g/1oz butter
4 spring onions, finely sliced
50g/1?oz stilton, crumbled
100ml/3?fl oz double cream
salt and freshly ground black pepper
pinch freshly grated nutmeg
For the croutons
4 slices French bread
100g/3?oz stilton, sliced

Method
1. For the soup, place the pieces of broccoli into a glass bowl. Pour over the vegetable stock.
2. Cover with cling film and place in the microwave. Cook on full power for four minutes until tender.
3. Meanwhile, heat a frying pan until hot then add the butter. When it starts to foam, add the spring onions and cook for one minute.
4. Place the cooked broccoli and stock into a blender. Add the cooked spring onions, stilton and cream and blend until smooth.
5. Transfer into a pan and bring gently to a simmer.
6. For the croutons, toast the French bread under a grill until just golden on each side.
7. Top with the slices of stilton and return to the grill until golden and bubbling.
8. Season the soup with salt, freshly ground black pepper and a pinch of nutmeg.
9. Divide the soup between four warm bowls and top each with a stilton crouton. Serve.

or Creamy broccoli and Stilton soup
1 tbsp olive oil
1 tbsp butter
1 garlic clove, chopped
? large onion, chopped
170g/6oz broccoli, florets and stem, chopped
150ml/? pint hot chicken stock (vegetarians can substitute vegetable stock)
salt and freshly ground black pepper
1 free-range egg yolk
3 tbsp double cream
55g/2oz Stilton

Method
1. Heat the oil and butter in a saucepan.
2. Add the garlic and onion and sauté for 2-3 minutes, or until soft.
3. Add the broccoli and cook for 1-2 minutes.
4. Add the hot chicken stock. Bring to the boil then simmer for 4-5 minutes, or until the broccoli is tender.
5. Pour the soup into a blender or food processor and mix until smooth. Season with salt and freshly ground black pepper.
6. Place the egg yolk and cream into a bowl.
7. Add the hot soup and stir until the soup thickens slightly.
8. Crumble over the Stilton and serve hot.
