What is a good marinade for roast veggies, like, pepper, mushrooms, zucchini, eggplant and carrots?!

I just buy italian dressing and throw it in there with garlic and olive oil and lots of pepper! Yummm

I USE JUST A LITTLE SEA SALT, FRESH GROUND PEPPER AND OLIVE OIL....
OLIVE OIL HAS WONDERFUL FLAVOR ALL ITS OWN!!!

citrus is always good.. ginger and lime.. different oils.. and fresh herbs. matters what meats or other dishes you are serving really..

you can use fruit juices too.. like pineapple and apple.. pomegranate, and lemon or orange.

balsamic vinegar is great!!!

light teriyaki sauce (not the thick goopy kind) with a touch of lemon juice
