Would anyone have a rum ball recipe?!


Question: I've lost my mother's recipe but I know it contained real rum and crushed weat bix. I can't find the recipe on-line anywhere. Many thanks!

Aussie Christmas Rum Balls

9 Vita Brits or Weet-Bix
1/2 cup coconut
1 cup chopped raisins (optional)
2 tablespoons cocoa
1 (400 g) can condensed milk
3 tablespoons bundaberg rum (dark rum)
extra coconut or chocolate sprinkles

Mix together well in a bowl.
Cover in the fridge for ? hour. (That's what we do in Australia.).
(Yours could probably sit in the bowl in the snow.).
Shape into balls and roll in coconut or chocolate sprinkles.

Rum Balls

You need:
4 cups of cake or biscuit crumbs
2 Tbsp icing sugar
2 Tbsp cocoa
250g Butter or margerine
2 Tbsp condensed milk
2 drops of almond essence
2 Tbsp rum
4 drops vanilla essence

Method:
Melt the butter either in a saucepan or in the microwave (in pyrex or microwave-safe bowl). Stir in the cocoa and sugar and heat until dissolved.

Add the rum, essences and condensed milk. Stir the mixture through the biscuit (or cake) crumbs and mix well.

Roll into small balls and toss in cocoa, sifted icing sugar or chocolate sprinkles. Refrigerate until firm.

Serving Suggestion: Serve with a fresh cup of coffee or a glass of tawny port!

Here is My Recipe:

Ingredients
1 c. crushed vanilla wafers
1 c. ground pecans or walnuts
1 c. confectioners sugar
2 Tb. cocoa
1 1/2 to 2 1/2 Tb corn syrup
1/4 c. rum or bourbon (more for cook if desired)
Directions
Grind the nuts in a food processor until very finely chopped. This will take a minute or minute and a half.

Mix crushed (fine, but not to a powder!) cookies, nuts, sugar and cocoa. Add combined syrup and rum. Let sit for a few days in the refrigerator; the batter improves with age.

Shape into 3/4-inch diameter balls and roll in confectioners sugar.
