You scoop a ice cream, beat egg whites ( dont have any yolks please or it wont beat ) till you can see peak on your beaters, add sugar then beat again till stiff. coat it on your ice cream, preheat your oil to 200 and dump it in there. till golden brown

Fried Ice Cream
INGREDIENTS
* 1 quart vanilla ice cream
* 3 cups crushed cornflakes cereal
* 1 teaspoon ground cinnamon
* 3 egg whites
* 2 quarts oil for frying

DIRECTIONS
1. Scoop ice cream into 8 - 1/2 cup sized balls. Place on baking sheet and freeze until firm, about 1 hour.
2. In a shallow dish, combine cornflakes and cinnamon. In another dish, beat egg whites until foamy. Roll ice cream balls in egg whites, then in cornflakes, covering ice cream completely. Repeat if necessary. Freeze again until firm, 3 hours.
3. In deep fryer or large, heavy saucepan, heat oil to 375 degrees F (190 degrees C).
4. Using a basket or slotted spoon, fry ice cream balls 1 or 2 at a time, for 10 to 15 seconds, until golden. Drain quickly on paper towels and serve immediately

FRIED MEXICAN ICE CREAM

1 pt. vanilla ice cream
1/2 cup crushed corn flakes or cookie crumbs
1 tsp. cinnamon
2 tsp. sugar
1 egg
Oil for deep frying
Honey
Whipped cream

Scoop out 4 or 5 balls of ice cream. Return to freezer. Mix crumbs, cinnamon and sugar. Roll frozen ice cream balls in half the crumb mixture and freeze again. Beat egg and dip coated balls in egg, then roll again in remaining crumbs. Freeze until ready to use (for thicker coating repeat dipping in egg and rolling in crumbs).

When ready to serve, heat oil to 350 degrees. Place a frozen ice cream ball in fryer basket or on a perforated spoon and lower into hot oil 1 minute. Immediately remove and place on dessert compote. Drizzle with honey and top with a dab of whipped cream. Continue to fry balls one at a time. Balls will be crunchy on the outside and just beginning to melt on the inside. 4-5 servings.

MICKEY'S FRENCH FRIED ICE CREAM

1 pt. vanilla (or any flavor) ice cream
2 egg whites
3 tbsp. (3 oz.) almond paste
3/4 cup graham cracker crumbs
3 cups vegetable oil or fat for frying
4 peach halves, fresh or canned
1 cup vanilla sauce
3 tbsp. chopped walnuts
4 sprigs mint

Scoop ice cream into 4 balls. Freeze until very hard. Blend egg whites into almond paste until smooth. Dip ice cream balls into almond paste mixtures then coat heavily with graham cracker crumbs. Freeze until very hard. Store- wrapped, in freezer until serving time.

When ready to serve, heat oil in a 1 1/2 quart saucepan to 300 degrees. Fry one at a time until golden brown about 15 seconds. Drain on paper towels. Serve at once in a peach half in a champagne glass and top with vanilla sauce. Chopped walnuts and sprig of mint.

Vanilla Sauce
Start to Finish: 15 min.

Ingredients
1 1/3 cups milk
2 egg yolks
1/3 cup sugar
1 teaspoon vanilla

Directions
In a 1-1/2-quart saucepan bring milk just to a simmer, stirring frequently. Remove saucepan from heat.

In a medium bowl gradually stir 1/4 cup of the hot milk into the egg yolks; add sugar. Beat with an electric mixer on highspeed for 2 to 3 minutes or until mixture turns thick and lemon colored.

Gradually stir about half of the remaining milk into the egg yolk mixture. Return all to the saucepan. Cook and stir overmedium heat just until mixture bubbles.

Remove from heat. Stir in vanilla. Serve immediately. Makes about 1-2/3 cups (thirteen, 2-tablespoon servings).

Make-Ahead-Tip: Prepare as above. Transfer to a clean bowl; cover surface with plastic wrap and chill in the refrigerator for up to 2 days.
