Try blanching baby leeks, the wrapping in boiled ham (You can buy this loose at the deli counter )Then cover in a cheese sauce, goes great with any meal.

Roast them - in a little butter

I like to steam them, and serve with a cheese sauce.

One bit of advice.Be sure that you clean the leek very well.Dirt can hide down inside the crevasses.

Little joke, but I think leek soup is divine.

Blanche then fry in butter and pepper.

blanche them first, strain, put in ovenproof dish, pour cheese sauce over, put in oven till golden brown. Simple bit effective.

Braise them in stock made from an oxo cube
mmmmm very tasty

I love them roasted together with carrots with a little olive oil and seasoning.

try this its yum yum.3 Tbs butter
3 large leeks, cleaned and sliced
1 onion, diced
2 stalks celery, diced
4 cups chicken broth
2-3 potatoes, peeled and sliced
2 sprigs of fresh parsley or equivalent dried
1 cup cream
chives for garnish

Melt the butter and slowly saute the leeks, onion, and celery about 15 minutes until softened. Add the chicken broth, potatoes, and parsley and simmer another 15-20 minutes, until the potato is soft. Use a hand blender to make it smooth or put batches of into your blender and puree.

Add some hot soup to the cream and then pour it back into the soup. If you're serving hot, keep warm until serving and garnish with a few chives. If you're serving it cold, add the chives and then chill.

I served this with tuna melts for a great xmas supper.

My dear departed mum always did this. Thinly slice the leeks and dunk them in batter. Lightly fry on both side until cooked through and serve either as a accompaniment or as a dish on their own. Fantastic lol.

1) Fry them in butter with some thyme and a pinch of garlic salt.

2) Roast them with a mixture of other root vegetables.

3) Cook them in a creamy cheese sauce, made with garlic and herb soft cheese.

Bake them and then cover with a cheesy sauce and grill till brown.
