I like to marinate them in Italian dressing for about 1 hour or two then roll in Italian style bread crumbs that have shredded/grated Parmesan and Romano cheeses mixed in - then I bake them on a baking sheet that I have sprayed with Pam at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. I like to serve them with smashed potatoes, green beans and maybe some gravy or seasoned noodles or rice. It is easy, fast and very tasty.

I also do this with pork chops and serve with applesauce, smashed potatoes and broccoli with cheese sauce.

Garlic Chicken Fried Chicken

Ingredients-
2 teaspoons garlic powder, or to taste
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon paprika
1/2 cup seasoned bread crumbs
1 cup all-purpose flour
1/2 cup milk
1 egg
4 skinless, boneless chicken breast halves - pounded thin
1 cup oil for frying, or as needed

Preparation-
In a shallow dish, mix together the garlic powder, pepper, salt, paprika, bread crumbs and flour. In a separate dish, whisk together the milk and egg.
Heat the oil in an electric skillet set to 350 degrees F (175 degrees C). Dip the chicken into the egg and milk, then dredge in the dry ingredients until evenly coated.
Fry chicken in the hot oil for about 5 minutes per side, or until the chicken is cooked through and juices run clear. Remove from the oil with a slotted spatula, and serve.

one of my favs..

This easy and delicious recipe takes just minutes to make.
INGREDIENTS:
6 slices bacon
1 Tbsp. butter
1 Tbsp. olive oil
6 boneless, skinless chicken breasts
1 onion, chopped
3 cloves garlic, minced
1/2 tsp. salt
1/8 tsp. pepper
1-1/2 cups shredded cheddar cheese
PREPARATION:
Cook bacon in 12" skillet until crisp, about 4-6 minutes. Crumble bacon and set aside. Pour bacon grease out of skillet, but don't wash or wipe it. Add butter and olive oil to skillet. Saute chicken breasts in this mixture over medium heat, turning once, until chicken is cooked and no longer pink in center.
Place chicken in ungreased 12x8" baking dish.
Cook onion and garlic in drippings remaining in skillet. Cook until onion is softened, then stir in salt, pepper, and cooked bacon. Spoon over chicken breasts and sprinkle with cheese. Bake at 350 degrees for 10-15 minutes until cheese is melted. Serves 6

I just answered this for someone else......here ya go!!!

If the chicken is boneless skinless breasts, I like a simple pan fry method, just pan fry in some butter/olive oil, salt and pepper......sometimes simple is the best, and it lets the true taste of the chicken through.....Oven roasted potatoes and some green beans on the side would be nice, OR a nice rice pilaf and some steamed broccoli in a lemon butter sauce......

If you want to try something new on your family, here's one that has met with a LOT of success, and only 3 ingredients!!

Apricot Chicken

1-1 1/2 lbs chicken breasts, boneless skinless
1/2 cup apricot preserves
3 TBS Dijon style mustard
1/4 cup cider or red wine vinegar

Brown chicken breasts on both sides, mix preserves with mustard and pour evenly over breasts, cover and cook 10 minutes on medium heat. Remove chicken to a plate and cover with foil and put in 200F oven to keep warm......Turn heat to high and stirring constantly, add vinegar to pan sauces and cook on high till reduced to a thick glaze, about 3-5 minutes.......remove chicken from oven and add any accumulated juices from plate to pan and stir........pour pan sauce over chicken and serve immediately.......Enjoy!!!

BTW, you can also prepare pork chops the same way, only substitute black current preserves for the apricot preserves....
