You can't leave anything in hot oil for too long or it will burn. If you want, you can "deep fry" your vegetables (mushrooms, zucchini) on a fondue fork for a few seconds up to a minute or two.

You can also have a broth based fondue in which you leave the onions and other vegetables in your fondue pot to add flavour. At the end of the fondue, you can even save the broth for soup.

It will burn.

It would burn and go bitter if left in there. You could instead infuse your oil ahead of time, and strain out the garlic and onion before heating. You could also just marinate the meat.

you can put them into the oil to infuse flavor but don't leave them in there. cook them and then skim them out. If you leave them in they will burn and give the oil a bitter taste.

No you can't. Put Garlic, onions and "such things" in the sauces.
