You can add any type of salad fixings...eggs, tuna, cheese cubes, zucchni, squash...bacon bits, croutons..what ever you are hungry for at the time!! Enjoy

You can use any type of noodle you want. I like using rotini or farfalle (bowties). It's not the type of pasta that really matters, it's what you put in it. I use feta cheese, sliced black olives, and Kraft's ceaser vinagrette dressing. There are no specific measurement, but you'll usually be safe with one box of pasta, one bottle of dressing, 1-2 cans of olives (the small ones), and 1 cup of cheese.

This is my Mom's macaroni salad. I don't know where she got the recipe originally, but everyone likes it, and I generally have to double or quadruple the recipe for large family gatherings.

Mom’s Macaroni Salad

Ingredients

? lb elbow macaroni
3 large eggs
1 rib celery
1 small onion
1 (6 oz) can chunk light tuna
? C mayonnaise
seasoning salt & pepper

Directions

Boil the macaroni until al dente, and allow to cool to room temperature. Hard boil the eggs, cool under cold running water, peel, & chop. Chop the celery and onion coarsely, including the leaves if the celery has any.

Drain the tuna, and break it up into loose pieces. Place the macaroni and vegetables in a large mixing bowl, add the tuna, chopped eggs, and mayonnaise. Mix until everything is evenly distributed. Add seasonings to taste. Cover and chill until served, at least ? hour.

Serves 6-8, as a side salad

Notes

? If the salad seems dry, add more mayonnaise.
? Those on a sodium-restricted diet can substitute whatever salt substitute or herbal mixture they prefer instead of the seasoning salt.
