this is the recipe we've used for years
from the kraft marshmallow creme jar..

Fantasy Fudge

Yes, this is the original Fantasy Fudge recipe from the back of the Kraft Marshmallow Creme jar. We'll never know why they changed the recipe on us, but we've preserved the recipe for you right here.

Makes about 117
3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk
1 12-oz. (340 g) package semi-sweet chocolate chips
1 7-oz. (198 g) jar Kraft Marshmallow creme
1 cup chopped nuts
1 tablespoon vanilla

Traditional method:
Combine sugar, margarine and milk in heavy 2-1/2 quart saucepan; bring to full rolling bail, stirring constantly. Continue boiling 5 minutes over medium heat, stirring. Remove from heat, stir in chocolate till melted. Add marshmallow creme, nuts & vanilla beat till blended. Pour into greased 13 x 9-inch baking pan. Let cool and cut into 1-inch squares.

Microwave method:
Microwave margarine in 4-quart microwave-safe bowl on HIGH (100%) 1 minute or until melted. Add sugar and milk; mix well. Microwave on HIGH 5 minutes or until mixture begins to boil, stirring after 3 minutes. Mix well; scrape bowl. Continue microwaving on HIGH 5-1/2 minutes; stir after 3 minutes. Stir in chips until melted. Add remaining ingredients; mix well. Pour into greased 13 x 9-inch baking pan. Cool at room temperature; cut into squares. Makes 3 pounds.

Note: Can be made in a smaller pan for thicker squares (yield will be reduced).

The best fudge I've ever had is on the Hershey's cocoa container.

Your best recipes will come from a senior citizen at your local meal site at lunch time and sit down and ask some old lady if she has a good recipe or just look in the Betty Crocker cook book, but your best stuff will come from some old lady

Irish Crème Fudge

I also use other liqueurs in place of the Irish Creme such as Kahlua, bandy, Kirsch, spiced/flavored rum and the new flavors of Kahlua mixing and matching nuts, coconut and dried fruits to match the liqueurs.

3 sticks of butter (3/4 pound)
3 cups sugar
2/3 cup evaporated milk
1 7-ounce jar Kraft marshmallow crème
12 ounce bag semi-sweet chocolate chips
1 bottle (airline size or nip) or 1 shot Irish Crème
2 cups walnuts or pecans - optional
2 8-inch square pans sprayed with non-stick spray

In a heavy 3 quart sauce pan - I prefer an enameled cast iron -melt butter, sugar and evaporated milk. Bring to a boil, turn down heat to a low boil and cook for 5 minutes.

Turn off heat and mix in marshmallow crème. Once that is incorporated, mix in the chocolate chips until mixture is an even chocolate color then add the Irish crème and nuts, mixing thoroughly.

Pour mixture into pans and cool thoroughly before cutting into squares and serving.

Try this fudge recipe, I made this fudge last Christmas and it was so easy to make, and it came out sooo good!
Easy Toll House Famous Chocolate Fudge
Recipe
1 1/2 cups sugar (use nothing less than this amount)
2/3 cup evaporated milk
2 tablespoons butter
1/4 teaspoon salt
2 cups mini marshmallows
1 1/2 cups Nestle's toll house semi-sweet chocolate chips (9 oz)
1/2 cup chopped pecans or walnuts (optional)
1 teaspoon vanilla
1 8x8 inch pan


1. Line 8-inch square pan with foil.
2. In a heavy-duty sauce pan, combine sugar, evaporated milk, butter and salt; bring to a FULL ROLLING BOIL, over medium heat, stirring constantly.
3. Boil, stirring constantly for 4-5 minutes (this must be timed, nothing less than 4 minutes!).
4. Remove from heat; stir in the marshmallows, chocolate chips and vanilla, stirring vigorously until marshmallows are completely dissolves.
5. Stir in nuts.
6. Pour mixture into prepared foil-lined pan.
7. Refrigerate for 2 hours, or until firm.
8. Lift from pan (with foil), remove foil; cut in squares.

INGREDIENTS
* 6 ounces cream cheese, softened
* 1/8 teaspoon salt
* 1/2 teaspoon vanilla extract
* 4 cups confectioners' sugar, sifted
* 4 (1 ounce) squares unsweetened chocolate, melted and cooled
* 1 cup chopped walnuts

DIRECTIONS

1. Line an 8x8 inch dish with foil.
2. In a medium bowl, beat cream cheese until smooth. Beat in salt and vanilla. Beat in confectioners' sugar, a little at a time, until smooth. Stir in melted chocolate. Fold in walnuts. Spread into prepared pan. Chill 1 hour, until firm. Cut into one inch squares.

Quick, Easy and Tasty

3 Cups chocolate chips
4 Tablespoons butter
1 can sweetened condensed milk
1/4 -1/2 C marshmallow fluff
1 tsp vanilla
1/2 - 1 Cup walnuts (or pecans)

In microwave dish place chips, butter and condensed milk
Microwave for 2-5 min until melted. stir after 2 min and each minute thereafter. When chips are melted add vanilla, fluff and stir until well combined, stir in walnuts. Pour into prepared pan. I use small foil pans with lids. Each one will hold a pound of fudge and the recipe will make about 2 1/2 lbs with the nuts.. Chill in the refrigerator.

Fantasy Fudge

3 cups sugar
3/4 cup margarine
2/3 cup evaporated milk
12 oz package semi sweet choc. morsels
7 oz. jar marshmallow creme
1 cup chopped pecans
1 tsp vanilla

Combine sugar, margarine and milk in a heavy saucepan. Bring to a boil, stirring contantly. Continue to boil over medium heat for 5 minutes, continue to stir so it won't scorch. Remove from heat, stir in morsels until melted. Stir in the marshmallow creme, nuts and vanilla. Beat until well blended. Pour into a buttered 13X9 inch dish. Cool completely and cut into squares.

I found a few good recipes on this website.

When making fudge, most recipes make you either melt the ingredients over a stove or a double boiler. Both of them are good, but make sure that when you are dissolving the sugar in the mixture, make sure it is COMPLETELY dissolved.
Otherwise your fudge will be kind of gritty.

Chocolate Fudge

INGREDIENTS
1 1/2 cups confectioners' sugar
1/3 cup skim milk
6 tablespoons butter
1 cup semisweet chocolate chips
3/4 cup marshmallow creme
1/4 teaspoon vanilla extract
3 tablespoons cocoa

DIRECTIONS
Grease one 8x8 inch pie pan and set aside.
In a heavy saucepan over medium heat, combine the powdered sugar, milk and butter. Mix well and stir constantly until candy thermometer reads 238 degrees F (112 degrees C).
Remove from heat and add chocolate chips, marshmallow creme, vanilla and cocoa. Quickly stir together and pour into prepared pan. Cool and serve. Refrigerate in an airtight container.

EASIEST EVER!

2 bags of any flavor chocolate chips
1 can condenced milk

pour all in microwavable bowl, microwave watching for it to melt,remove and stir throughly. spread quickly on wax paper lined cookie sheet to desired thickness. Refridge to cool quickly but allow to cool throughly before cutting. This is SUPER easy & delicious!!!! Merry Christmas!
