A true Alfredo sauce has no whipped cream or cream cheese. The recipe for fettuccini Alfredo is as follows:

Fettuccini Alfredo
Ingredients:
16 ounces fetuccini noodles
4 ounces unsalted butter, melted
4 to 6 ounces Parmesan cheese, grated
4 ounces cream
salt to taste
1 teaspoon black pepper, coarsley ground
2 to 3 tablespoon fresh parsley, chopped
Preparation:
Bring a large pot of cold salted water to a boil Add the pasta and cook until it is al dente. Drain, pour into a bowl and add the butter. Add the cheese and cream. Stir in the pepper, parsley, and serve immediately.

ALFREDO SAUCE -

4 tablespoons butter
4 tablespoons flour
1 cup milk
1 cup chicken broth
1 cup shredded Italian cheeses (Mozzarella, Romano, etc.)
1/2 cup Parmesano Reggiano cheese (or plain Parmesan)
3 tablespoons fresh or 1-2 tablespoons dried parsley
4-5 cloves garlic, minced
1/2 teaspoon fresh nutmeg
1/4 cup sherry or white wine
salt and pepper

Melt butter and add flour. Cook for 2-3 minutes, stirring constantly to cook flour. Add milk and broth all at once and blend well. Add the remaining ingredients and stir until cheese has melted and sauce is smooth.
Pour over chicken, shrimp or pasta.

Additional cheese can be added to the topping, if desired. Bake in oven until cheese is golden brown.

Chicken & Broccoli Alfredo

Prep/Cook Time: 20 minutes

Serves: 4


Ingredients:
1/2 pkg. linguine (8 oz.)*
1 cup fresh OR frozen broccoli flowerets - double
2 tbsp. butter
1 lb. skinless, boneless chicken breasts, cut into cubes
1 can (10 3/4 oz.) Campbell's? Condensed Cream of Mushroom Soup OR Campbell's? Condensed 98% Fat Free Cream of Mushroom Soup (substitute Cream of Chicken is you like)
1/2 cup milk - substitute fat free half & half if you like
1/2 cup grated Parmesan cheese
1/4 tsp. ground black pepper



Directions:
COOK linguine according to pkg. directions. Add broccoli for last 4 min. of cooking time. Drain.

HEAT butter in skillet. Cook chicken until browned, stirring often.

ADD soup, milk, cheese, black pepper and linguine mixture and heat through. Serve with additional Parmesan cheese.

TIP: *Or substitute spaghetti for linguine.

Here ya go: I am Italian (don't know if that means much) but, this is how I make mine:

1 stick of butter, melted
2 C Parmesan Cheese
Black Pepper to taste
One egg yolk
about 4-8 ounces of cream, or, non dairy creamer
fettuccine noodles

Boil your noodles. When done, add all above ingredients and stir together. That's it, that's all. Easy and delicious. You can add garlic powder, or, salt if you'd like.
