Side dishes for Christmas dinner?!

Get some red potatoes and wash them, peel them around the middle, pat dry.

Drizzle olive oil over them (you can even use flavored olive oil) chopped fine garlic and fresh rosemary. Rub the ingredients on all the potatoes with your hands and place them on a cookie sheet and place in a 350 degree oven for about 30-45 minutes.

They are pretty on a platter and tasty.

This one is a classic at my house. Carrot Souffle'. It is sweet like sweet potato souffle' and easy to prepare. You will never know you are eating carrots! My recipe is from the 1996 Southern Living Recipe Book. You can go to ask.com and type in carrot souffle and follow a simple recipe. You won't be sorry.

Green Bean Bundles are good and better dipped in ranch dressing or a honey mustard sauce.

Get some fresh green beans and wash them and snip off the ends. Get some green onions and steam the stems only to make them limp. Bunch four green beans at a time and tie them together with the onion stem. Make a bow. Dip them in buttermilk and roll them in rice flour or seasoned flour and fry them up.

Corn and Pea Salad

This is a tasty side that can be made ahead and served with the meal. Will compliment the meat.

1/3 cup vegetable oil
1/3 cup white vinegar or seasoned rice vinegar
1/4 cup sugar
1/8 tsp. salt
1 10 & 1/2 oz can of whole white shoepeg corn (drained)
1 8 & 1/2 oz. can english peas (drained)
1 4 oz jar pimento's
1 cup chopped green peppers
1 cup chopped red peppers

Combine first four ingredient's in a saucepan and bring to boil stirring to dissolve sugar. Let cool 5 minutes Combine remaining ingredients in a bowl and stir in vinegar mixture. Let chill for eight hours.

Deviled Eggs are always a treat.

Boil the eggs and slice them in half. With the inside yolks mash them and add mayo, sweet pickle relish and salt and pepper to taste with a touch of garlic powder. Mix and put back in the egg halves. Sprinkle them with paprika.

How about twiced baked potatoes? Or use those red potatoes, quarter them, drizzle with olive oil, then add fresh rosemary, salt and pepper. Bake until done. I've made both several times for meals.

Cheesy potato casserole

8-10 redskin potatoes
1/4 lb shredded cheddar
1/4 lb shredded white American (or other mild cheese)
1/2 pint of whipping cream
1/2 pint of milk
onions to taste
1 tsp dry mustard
salt and pepper to taste

boil the potatoes for 8-10 minutes then quarter them and place in a 9X13 casserole dish. Heat the whipping cream, milk, and cheeses until the cheese melts. Mix in the salt, pepper and dry mustard,. Place onion over the potatoes, then pour the cheese mixture on top. Bake at 350F for 35-40 minutes.

Cheesy potatoes or scallops go great with pork.
Stuffing is always a hit.
I love steamed broccoli.

White rice, Black beans, yuca with mojo and a salad

How about green beans and corn.

3-4 heads of fresh broccoli
1- small package of velveeta cheese
1/2 stick of butter
1 sleeve of ritz crackers

Steam broccoli and place in oven safe casserole dish
Cube up velveeta cheese & butter and melt in mocrowave (you should do this in batches to make it easier)
Pour melted cheese mixture over broccoli and mix
Crush up a handfull of crackers over broccoli - mix again
crush up a few more crackers to coat the top
Cover and bake at 350-400 degrees for about 20 - 30 minutes

instead of peeling the potatoes for mashed potatoes, leave the skin on & just wash them. I love mashed potatoes with the skins in it.
What about the old standby, green bean casserole? I personally can't stand it, but many people like it.

Cinnamon applesauce always goes well with pork as does a sweet potato casserole.

Kings Arms Tavern Sweet Potatoes

3-pounds sweet potatoes
?-cup light brown sugar, packed divided
3-tablespoons butter
5 teaspoons cinnamon
?-teaspoon nutmeg
?-teaspoon salt
1-cup milk
Preheat oven to 400o
Grease 1? quart casserole
Cook sweet potatoes in boiling salted water until done; drain peel and mash them.
Stir in all the remaining ingredients except 2 tablespoons of sugar.
Turn the mixture in to prepared casserole and sprinkle with remaining sugar.
Bake at 400o for 30 minutes.
