Marzipan...do you have an easy, delicious recipe to share???!


Question: My father in law loves marzipan, but I've never made it before...I want to surprise him for Christmas. Do you have an easy recipe you'd be willing to share with me??? Thanks and Happy Holidays!

It's pretty tough to make from scratch...

1 lb almonds (blanched)
1 lb powdered sugar
1 or 2 egg whites

Let dry for a day or so spread out on a baking sheet on the kitchen counter.
Blend/process to fine texture (like rough coffee grounds)
Blend/process again with the powdered sugar and one egg white. You may not need the second egg white, so wait and see how the texture is after you add the first one. Don't process the mix too much, or the oil from the almonds will seep out and make it greasy.

After you're done with the mix, you can use it for a gazillion things. Like decoration for cakes or let it be a treat in itself. In my country, we take little chucks of marzipan and roll them in chopped nuts, dip 'em in chocolate, color with food coloring and whatever else you can think of. This is very "xmas" is scandinavia. We make snowmen, "carrots", "apples" etc out of the mix by using different colors and shapes.

A recipe for just marzipan or recipes with marzipan in them?

****ALMOND PASTE (MARZIPAN)

1/2 lb. ground almonds
1/2 lb. icing sugar, sifted
1/2 lb. caster sugar
1 egg beaten
2 tsp. lemon juice
1/4 tsp. vanilla essence
1/4 tsp. almond essence


Put the almonds, icing and caster sugars into a large mixing bowl and stir well to mix. Beat in the remaining ingredients, until the paste is soft but not sticky. Turn onto a board or table sprinkled with icing sugar and knead the paste lightly until smooth. Use immediately or wrap in cling wrap.
