Anyone got an easy quick fast chicken recipe?!
Answers: i need somthing to make for dinner ...i don't have much to work with ...i have boneless skinless chicken, salsa, marble cheese.
Bake it with the salsa over it. The last 10 mins, add the cheese (grate it) on top.
A great way to cook chicken fast is to make a oven pouch out of Reynolds wrap and throw your seasonings inside with a bit of water or lemon juice. The aluminum foil speads up the cooking and keeps the chicken moist.
Remember to pinch the ends together well or it defeats the purpose.
I like to marinate them in Italian dressing for about 1 hour or two then roll in Italian style bread crumbs that have shredded/grated Parmesan and Romano cheeses mixed in - then I bake them on a baking sheet that I have sprayed with Pam at 375 degrees F for 45 minutes to 1 hour depending upon how thick/big they are. I like to serve them with smashed potatoes, green beans and maybe some gravy or seasoned noodles or rice. It is easy, fast and very tasty.
I also do this with pork chops and serve with applesauce, smashed potatoes and broccoli with cheese sauce.
sprinkle the breasts with Italian seasoning if you have some, then with Parmesan. Bake at 400F for 22 minutes.
No seasoning or parmesan, do the same with your salsa and cheese.
TEX-MEX CHEESY SALSA CHICKEN
4 skinless, boneless chicken breasts or thighs
1 16 oz jar chunky salsa, medium
4 slices Swiss cheese
4 slices tomato
1 tbs. butter
Brown chicken in butter using a skillet. Once browned, cover chicken with salsa. Cover and let simmer, about 30 minutes, or until chicken is done.
Remove from heat. Cover each piece with a slice of tomato and a slice of cheese.
Replace cover and let the cheese melt and tomato warm, about 10 minutes.
Serves four. White rice is very good with this.
hmmm... chicken breast and shake and bake is always good and easy - cheap too!
I cook 20 meals a day and the faster chicken recipe I have is Teriyaki chicken. You can purchase a pouch by Lee Kum Kee which is teriyaki sauce. Squeeze out sauce from the pouch, add a little water and put the chicken in.
Cook over stove top until chicken is done. You may cover for the first half of your cooking time to prevent loss of liquid and your chicken will steam in the pot.
You may add more sugar or honey to taste while cooking.
For a complete meal, you can add the thick rice noodles that has been pre boiled and mix with the chicken or you can serve it over steam rice.
Chicken Shrimp Artichoke Casserole Recipe
4 cans (8 1/2 ounce, drained weight) artichokes
4 pounds shrimp, cooked and cleaned (other seafood may be substituted)
8 whole chicken breasts, cooked, boned and cut into large-sized chunks
3 pounds fresh mushrooms, sliced
3 tablespoons butter
6 cups thick white sauce (below)
2 tablespoons Worcestershire sauce
Salt and pepper to taste
1 cup sherry
1/2 cup grated Parmesan cheese
Paprika
Chopped parsley
White Sauce
1 1/2 cups melted butter
1 1/2 cups flour
6 cups milk
Arrange artichokes in bottom of buttered casserole. Add shrimp and chicken. In large skillet, sauté mushrooms in butter. Drain well on paper towels or the sauce will get too diluted. Add mushrooms to casserole. Combine ingredients for white sauce. Heat and stir until creamy. Add Worcestershire, salt, pepper and sherry to white sauce. Pour sauce over casserole.
Sprinkle top with cheese and dust with paprika and parsley. Bake at 375° F. uncovered for 40 minutes.
Serves 15.
Easiest: Boil the chicken. Just throw it in a pot of water with a quarter onion and let it boil. It will turn white. It will be very tender. This should take about 15 minutes or so, depending on the thickness of the breast. If you want to cut the cooking time, fillet the breast (slice it length-wise to make it thinner).
Once it is cooked you have a few options:
1) Tacos. Shred the chicken, heat some corn tortillas over a flame or on a griddle. Add the chicken, salsa and cheese. If you have lettuce, add that too.
2) Cube it, add the salsa and cheese and serve over rice (if you have it)
3) Chicken salad. If you have lettuce and tomato - add the cooked chicken, salsa and cheese over lettuce.
All are very healthy, and as you noticed there was no oil involved and very little fat. Also, all options are very cost-conscious as the ingredients are fairly inexpensive (aside from the chicken breast).
If you've got lemon, garlic or onions sautee the chicken in a little extra virgin olive oil with teaspoon of cumin until browned,with quarter cup of lemon juice, 2 cloves of minced garlic, and half a cup of chopped onion and simmer for half an hour. Garnish with lemon zest. amazing really.
