What's your best recipe for meatballs?!
Answers: I'm supposed to cook dinner for my special someone and I just figured I'd ask to see the different recipes people in Y!A had. He's italian so I know I gotta cook up the best. 10 points to the best recipe!
my uncle is a famous chef all over the world! he gave me this resipe!! i promise u won't be disappointed !!!!!
2 pounds ground beef
1 cup fresh bread crumbs
1/2 cup finely grated Parmesan
1 heaping tablespoon chopped fresh basil
1 heaping tablespoon chopped fresh parsley
1 teaspoon kosher salt
1/2 teaspoon black pepper
1/8 teaspoon ground cayenne pepper
2 cloves garlic, minced
2 eggs
3 tablespoons olive oil.
1. In a large bowl, mix all ingredients except olive oil by hand, using a light touch. Take a portion of meat in hand, and roll between palms to form a ball that is firmly packed but not compressed. Repeat, making each meatball about 2 inches in diameter.
2. In a large, heavy pot heat olive oil over medium-high heat. When it shimmers, add meatballs in batches. Do not crowd. Brown well on bottoms before turning, or meatballs will break apart. Continue cooking until browned all over. Remove meatballs to a plate as each batch is finished. Let meatballs cool slightly; cover and refrigerate until needed
This is what my mom does:
In a bowl put
hamburger meat
2 eggs
package of saltine crackers
Then roll them in little balls and put them on a baking sheet in the oven like 350 or something close to that until brownish
mine aren't fancy but they are good
1# hamburger, about 1 cup oatmeal, and 1 egg..
salt and pepper.... form into balls, put into frying pan brown and cook till done... either make a gravy or other sauce for them.
I love making my own bread crumbs out of whole wheat bread and I also like using fresh onion, both ingredients make the meatballs moist and flavorful!
My Best Meatballs!
2 slices whole wheat bread, coarsely grated
2 tablespoons water
1 lb lean ground beef
1/4 cup parmesan cheese
1 egg white
1/2 teaspoon dried oregano
1-2 tablespoon fresh onions, grated
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
Combine bread crumbs and water to moisten. Add beef, cheese, egg white, oregano, onion, garlic powder, and pepper. Mix by hand until just completely combined, but do not overmix. Shape into 26 meatballs and place in foil lined, greased baking dish. Bake at 425 degrees for 12 minutes or until completely cooked through. Pat off extra grease once removed from oven.
*I like to heat pasta sauce on the stovetop in a saucepan while the meatballs are cooking and then add the meatballs to the warmed sauce for about 10 minutes. The flavors absorb eachother wonderfully! My favorite meatball recipe is subs with toasted buns and Italian cheese!

I don't know any Italian recipe but I know a swedish meatball recipe.Here are the steps..
* 6 tablespoons butter or margarine, divided
* 1 onion, chopped
* 1 cup dried bread crumbs
* 1 cup evaporated milk, divided
* 1 1/2 pounds ground beef
* 1 egg, beaten
* 1 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1 pinch dried parsley
* 1 1/2 teaspoons all-purpose flour
* 1 tablespoon tomato sauce
* ground nutmeg to taste
Step One
Melt 3 tablespoons butter or margarine in a large skillet over medium heat. Add the onion and saute for 5 to 10 minutes, or until tender.
Step Two
In a separate medium bowl, combine the bread crumbs with 2 tablespoons of evaporated milk and stir, allowing the crumbs to absorb the milk. Add the ground beef, onion, egg, salt, ground black pepper and parsley to taste. Mix well and form into golf ball sized meatballs.
Step Three
Heat remaining butter or margarine in the same skillet over medium to medium high heat and add the meatballs. Carefully shake the skillet to turn the meatballs, as needed. Saute for 10 to 15 minutes, or until meatballs are browned on all sides. Transfer the meatballs to a serving platter, reserving the liquid in the skillet.
Step Four
Add the flour to the skillet and stir until smooth. Then gradually add the evaporated milk, tomato sauce and nutmeg to taste; again stirring until mixture is warmed, smooth and creamy. Strain over meatballs.

4 tbsp tomato juice
3 cloves garlic smashed well
1 small onion grated
mix all the above well, place in a heavy pot with 1 cup water and 1 cup tomato juice, let cook over small flame till meatballs are firm.
I mix together some burger, ground turkey, finely chopped onions, finely chopped garlic, salt, ground black pepper, a small dab of mustard, a small dash of soy sauce, 2 eggs, 3/4 a leaf of salted crackers and mix it together and form into 1- 1 1/2 balls. then I bake them for 30 minutes at 350* on a lightly greesed pan, turning them every 10 mintues so they can cook evenly. The size of the meatballs determines how long they will need to cook and the amount of meat will determine how much wet items are needed.
I find that it really makes a difference to use a combination of meats. Usually, I use ground beef and ground pork, but sometimes I'll also add ground lamb (because I like lamb!).
I tear up 2 or 3 slices of bread and soak it in about 1/2 cup of milk. I add 2 eggs and about 2 lbs. of meat. Add about 1/2 c. of chopped parsley and about 3/4 cup of grated Parmesan cheese. If you have fresh oregano, add that; otherwise use dried oregano. Season w/ salt and pepper. Mix it together with your hands, but don't over mix it or your meatballs will be too hard. Since I like to put meatballs in a red sauce, I bake them instead of frying them. I bake at 350 degrees for 20-30 minutes for 2 inch meatballs.

i don't know how many people you are feeding so i can't tell ya how much of what you'll need I always make a lot when i make it because of my family size i never have any left to freeze but if you make to much you can do that

4 slices of dry white bread
3 large eggs
2 tbs. fresh chopped parsley
1 tbs. salt
1 small clove garlic, chopped fine
1/2 tsp. pepper
2 tbs. grated cheese (Italian Style)
1 lb. chopped beef
Soak dry bread in water. Drain water. Add to meat. Add eggs, parsley, garlic, salt, pepper & cheese. Shape into balls & fry in deep fat until brown.
