Question about making pavlova. Is meringue created by baking the fluffy inside of the cake?!


Question: I've found many recipes but i'm confused.

So you whip up the fluffy inside bit...bake it. While its baking the outer bits of the fluffy stuff turn hard....and make meringue??

I always thought you make the meringue outer shell...then make fluffy stuff and put it in the shell?

Any good recipes would be wonderful too :)

BERRY MERANGUE ROLL
serves10
5eggwhites@room temp
2/3cup caster sugar
3tspns cornflour
600g,fresh,mixed berries
2/3cup mascarpone cheese
2/3cup thickened cream
icing sugar,garnish
1.Preheat oven190c,grease 2cm deep,25x38cm(base)baking tray.Line with baking paper allowing over hang(2cm)on both sides.
2Beat eggwhites till soft peaks form.Add1/2cup of sugar,1TBLspn@a time,beating well after each addition till dissolved.
Sift in cornflour&fold in using large matal spoon.
3.Spread on tray&bake12mins till just firm,pale golden.
4Place40cm piece of baking paper on work bench.Sprinkle with remaining sugar.Turn out merangue onto paper.Remove lining.Allow to cool.
5.Place1/3berries in bowl&mash with fork.Set aside.Whisk mascarpone&cream in a bowl till soft peaks.Add smashed berries&swirl through cream.Spread berry+cream mix over merangue,,leaving1cm boarder on all sides.Starting from1short end,roll up using paper,to form a swiss roll.Wrap paper around firmly to secure,place seam side down in fridge on tray.2hrs or till well chilled.
6.Remove paper,top roll with remaining berries&sprinkle with icing sugar.Slice&serve.

the pavlovas i have made have been baked meringue filled with fluffy stuff and other goodies (fruit, nuts).

i know there are as many ways to make pavlovas as there are pavlova makers. experiment! do it the way YOU want to - just follow the basics and be a culinary creator!

Well the whole cake is really a meringue. The outside is crispy meringue and the interior is just baked to a marshmallow-like texture. Whipped cream and berries are usually piled on top.

I agree with Jon R. That's how mine turn out. Then you top them with fresh fruit and whipped cream. Yum, yum, yum. How I love those things.
