Recipe for cinnamon raisin scones?!
Answers: I had a great recipe for cinnamon raisin scones that I used to make around Christmas time. I cannot for the life of me find it. The recipe called for raisins, cinnamon, vanilla, milk, eggs, sugar, and flour. The scones were made by making the dough into a large ball, flattening it out, and cutting it into eighths like a pizza. If anyone happens to have this recipe, or one similar, please share it with me. Thank you!
Cinnamon Raisin Scones
Whether pronounced scone as in "throne" or scone as in "gone," they're delicious warm from the oven at breakfast or tea time.
Ingredients
2 cups all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter or margarine
2/3 cup milk
1 beaten egg
1 teaspoon vanilla extract
1 cup Sun-Maid Natural Raisins
HEAT oven to 400 F.
COMBINE flour, sugar, baking powder, cinnamon and salt.
Using pastry blender or fork, CUT IN butter until mixture resembles coarse crumbs.
COMBINE milk, egg and vanilla.
ADD to flour mixture; stir until dry ingredients are moistened.
STIR in raisins.
With floured hands, SHAPE dough into 8-inch round on ungreased cookie sheet.
SPRINKLE with additional sugar, if desired.
CUT dough into 8 wedges; slightly separate wedges.
BAKE at 400 F for 15 to 20 minutes. Serve warm.
VARIATIONS:
Orange Cinnamon Scones: Add 1 tablespoon grated orange peel to dry ingredients.
Gingerbread Scones: Add 1 teaspoon ginger to dry ingredients and 2 tablespoons molasses to liquid ingredients.
Makes 8 servings.

BREAKFAST SCONES
3 c. packaged biscuit mix
2 tbsp. sugar
1/2 c. currants (or chopped raisins)
1 c. milk
GLAZE INGREDIENTS:
3 tbsp. sugar
1/4 tsp. cinnamon
1 tbsp. butter, melted
1 tbsp. cream
Preheat oven to 425 degrees. In medium bowl combine biscuit mix, sugar, and currants; mix well. With fork stir in milk to make soft dough. Drop by heaping tablespoons, 1 inch apart, on lightly greased cookie sheet. Bake 15 minutes. Serve warm.
If desired, brush with glaze: Combine 3 tablespoons sugar with cinnamon, butter, and cream to make paste. Brush over warm scones. Bake 2 minutes longer until lightly brown.
i have made lots of scones - thousands - and this is the best, easiest way i know of:
whip two cups of heavy cream in your mixer until it is almost butter. it will get stiff and start to get a little bit more yellow in color.
while mixing that, mix 3 1/2 cups of flour, 3/4 cup of sugar, 4 teaspoons of baking powder, 1/2 teaspoon of salt, and the desired amount of cinnamon in a bowl.
when the cream is ready, put it in the bowl on top of the flour mix. work it into the flour gently with your hands.
once the mix starts to come together, add the desired amount of raisins.
keep working this mixture until is stops sticking to your hands and starts to form a ball.
flatten and cut into the shape you want, bake, and eat.
i use spelt flour - it makes a killer scone. i also usually put the sugar in with the cream - if it is humid or cold where you are, this will make the sugar blend in easier and will reduce your kneading time.
